Kings Ridge - 2007 Oregon Pinot Noir Once again in some delusional, ass backwards mindset I picked up a shitty non-Willamette Valley wine in hopes it would be good. This time it bit me in the ass. This wine was fucking foul; Transients would turn it down. After sipping on this, Mad Dog 20/20 mango flavor was actually starting to sound pretty good. But while looking at the label I began to think it looked awfully similar to the not so bad Underwood Cellars. Then I did a little sleuthing and found out that they are both owned by Union Wine Company. Way to fuck up and be super inconsistent, geniuses. They are probably using the same fucking grapes it is just one dude sucks and the other is not so bad. Get new dudes at Kings Ridge. They can obviously do better. 1 out of 5. Don't drink this trash.

And I'm a Gemini. ;-) So, in emoticons, that means you might get either >:) or O:-), depending on which twin decides to check in at the appointed heure de blogging. ;-)

(Speaking of which, I think I'm going to cut out the little figurines from this website & perch them on my shoulder the next time the twins want to duke it out.)

Sometimes I feel like blogging about chocolate-covered goodies & other times, about food that's good for you! So, whichever category you like to read about, stick around, because this blog will have a bit of both!

Now I know I've said on previous occasions that I was going to mainly focus on delicious & healthy, whole foods, but there are times when the >:) in me just has to blog about gourmet goodies too. After all, life isn't all applesauce & oatmeal. ;-)

Widmer Brewing - '10 Pitch Black IPA

Widmer Brewing - '10 Pitch Black IPAWhen I decided to review this Pitch Black IPA from Widmer, I checked my absurdly massive archives and much to my surprise I had not reviewed any beers from this brewery despite their close proximity to my abode. Probably because most of their beer sucks donkey balls. Amnesia Brewing is right down the street from Widmer and they are WAY better (Amnesia does not currently bottle their beer, or have a website, but soon enough I will do a review on the brewery itself). Occasionally, Widmer comes out with a good limited release brew which is why I picked up this six-pack. Basically this is a nice black ale in its own right. Too bad that in a bullshit marketing move Widmer decided to slap the IPA label on it. I am sure they did this because out here anything that says "IPA" sells like hot cakes while "Black Ales" are marginalized. I don't really blame them since this marketing ploy worked on me and I did enjoy the beer but I still think that it is pretty fucked up. If you do have a chance to visit the brewery on Russell Street be sure to do it in the summer. You can sit outside in the shadow of the Fremont Bridge and drink beer from a huge ass stein (I can't remember the exact size but it is at least 40oz) while smoking fine cigars and conversing with good company. Well, in your case, talking to yourself and updating your twitter about what stupid shit your cats did today. 3.95 out of 5. Drink it.

So I did purchase another Upright Brewing bottle while I was at John's Market and I picked Seven since it appeared to be a nice light golden ale (in the Belgian tradition). The second I saw it come out of the bottle I knew I was in love. The color and clarity are everything I look for in a good beer: an almost orange hue and cloudy as shit. My first sip did not disappoint and neither did the rest of the bottle. Although they are two entirely different beers I much preferred Seven to Five and I had a massive hard-on for Five. Upright is so freaking amazing I think I am going to have to visit the tasting room at their brewery this weekend. Hopefully they take bad checks. 5 out of 5. Drink it.

Perfect Pumpkin Cheesecake Recipe for Tasty Kitchen

If you have been searching for the perfect dessert to grace your Thanksgiving table, search no longer. This is my first attempt at baking a full cheesecake and, besides a few cracks in the top, this pumpkin version turned out beautifully. So beautifully, in fact, that the entire thing was devoured within two days. This recipe is from one of the Tasty Kitchen members (The Pioneer Woman's community recipe site) and it certainly lives up to its name.

Title: Betty's Seasoned Oven-Baked Fries Recipe

In this video, Betty demonstrates a tasty low-fat alternative to French fries--her Seasoned Oven-Baked Fries. Spiced with Italian spices and baked until crisp, you'll never miss the fat!

Ingredients:

1 cup Italian-seasoned breadcrumbs
28 oz. package frozen steak fries 3 eggs, well beaten
2 tablespoons butter or margarine, melted
cooking oil spray

In a medium-sized mixing bowl, beat 3 eggs, using an electric mixer. Set aside. Place 1 cup seasoned breadcrumbs in a gallon-sized zip-lock plastic bag, and set aside. Spray a 15-inch by 10-inch baking pan with cooking oil spray. Dip steak fries, a few at a time, into beaten eggs. Place the dipped fries in the bag of breadcrumbs. Close the bag and shake until the fries are coated. Place fries in a single layer on prepared baking pan. When all fried are coated, drizzle melted butter or margarine evenly over the top. Bake at 400 degrees for 18 to 20 minutes, or until crisp and golden. Remove from pan to a nice serving plate, and serve immediately. These taste as good, or even better, than regular French fries, but have so much less fat!—plus, they are *so* easy to make!

In this video, Betty demonstrates how to make a terrific appetizer, her Hot and Tasty Onion Rings. These are served with Betty's Surfin' Seafood Cocktail Sauce or ketchup.

NOTE: IF YOU ARE NOT COMFORTABLE WORKING WITH HOT OIL, PLEASE DO NOT TRY THIS RECIPE.

Ingredients:

1 cup self-rising flour
1 egg, well beaten
1 cup milk
1/4 cup vegetable oil
onions, washed, dried, cut into rings and separated
2 inches of cooking oil in a deep fryer or pot on the stove (I used peanut oil.)

In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your raw onion rings prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip onion rings in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several onion rings at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all onion rings are fried and removed, pat the upper side to remove any further excess oil. Now, place the Onion Rings on a nice serving dish, and serve with Surfin' Seafood Cocktail Sauce. Enjoy!!!

The road to my husband's culinary heart is not a difficult one to follow. Contented sighs and groans of satisfaction are guaranteed with any meal that involves Mexican flavors, such as Rick Bayless' Smoky Peanut Mole with Pork Tenderloin, or black beans. While living in New York City, we ate a couple of memorable meals at Danny Meyer's acclaimed restaurant, Union Square Cafe. While this recipe is my own, I did borrow one of Union Square's serving ideas for their black bean soup. When the soup is brought to the table, a shot of sherry is offered. Stirred into the soup, the fortified wine lends a heady aroma and luxurious flavor. However, if you prefer to abstain, this soup is filled with layers of flavor that are sure to satisfy.

Recipe #131: Star-Spangled Strawberry Mousse Tartlets Decorated with Fresh Seasonal Berries

As promised, here's another recipe to celebrate the Fourth of July. This one's a unique creation that you're unlikely to find anywhere else. :) Enjoy!






















Star-Spangled Strawberry Mousse Tartlets Decorated with Fresh Seasonal Berries

Crust Ingredients:
2 c. hazelnuts, crushed
2 Tbsp. honey
2 Tbsp. orange juice
2 Tbsp. ground cinnamon
1 tsp. ground clove
1/2 tsp. salt
unbleached, all-purpose flour (for dusting)

Mousse Ingredients:
1 c. cold water
2 packets unflavored (i.e., Knox) gelatin
2. frozen strawberries
1 c. nonfat plain yoghurt
4 Tbsp. honey

Decorative Ingredients:
40 fresh blueberries, or 10 blueberries per tart
20 fresh red raspberries, or 5 red raspberries per tart

Kitchen Equipment & Supplies:
food processor
blender
non-stick rolling pin
nylon/silicone spatula (the kind used for spreading & scraping ingredients)
large pancake turner (also sometimes called a spatula as well)
5" star-shaped cookie cutter mold(s)
1-2 metal baking tray(s)
aluminium foil
wax paper

Directions: To make crust: Pour hazelnuts into a food processor & pulse until finely ground into almost a flour-like consistency (or as close to it as possible!). Add remaining crust ingredients (except for flour!) and continue to pulse until thoroughly combined. Dough should be thick and stick together; do not over-mix or crust will be too hard when baked.

Remove dough, scraping out remaining bits with a spatula. Form a dough ball & then place it upon a clean even surface that's been uniformly floured. (You might want to first cover your countertop with wax paper to make clean-up easier & faster.) Flour a non-stick rolling pin & and roll out the dough ball until it's about 1/4" thick, always starting from the center outward, to form a oblong shape, long & wide enough to cut out 4 star-shapes. Flour inside walls of star-shaped cookie cutter mold(s) & cut out 4 stars. (If you've only got one mold, you'll obviously have to repeat the cookie-cutting process four-times.) You might need to use a knife or your fingers to cut away the excess dough. If you'd like a thicker crust, take the excess dough & press it into the cookie cutter mold(s) until it's uniformly spread across the inside of the mold(s). (Or, alternatively, reserve dough for another recipe or use to make additional star-shaped crusts for more mousse tartlets.)

When you've finished making the shapes, carefully remove the dough from the cookie cutter(s). You may need to press the cookie cutter(s) down as you lift up the mold to extract the dough. Use a large pancake turner to transfer crusts to a large, aluminium foil covered metal baking sheet. (You may need to use 2 baking sheets if the crusts won't fit onto one sheet.) Place baking sheet(s) into an oven preheated to 350°F and bake crusts for about 15-20 minutes, or until golden-brown.

Please note: The tart dough can be made ahead & refrigerated until you're ready to bake the crust.

To make the mousse filling: While crusts are baking, pour 1 c. cold water into a small sauce pot. Add 2 packets of unflavored gelatin & let stand for 1-2 minutes. Heat on medium-high for 2 minutes, until dissolved. Let cool until gelatin is warm but not piping hot, about 2-3 minutes. While gelatin is cooling, add frozen strawberries, yoghurt, (4 Tbsp.) & honey to a blender. Then add gelatin mixture, using a spatula to scrape out residual gelatin from the bottom & sides of the pot. Pulse until smooth & frothy. Pour into a Pyrex glass or metal 9"x13" pan & refrigerate until gelatin mousse has fully set, about 20-30 minutes.

To assemble the dessertsWhen crusts have finished baking, remove them from oven & let them cool. Set aside. When crusts have cooled enough to touch them, peel them off of foil & using a large pancake turner, transfer to plates.

Remove mousse from fridge and use cookie cutter to cut out 4 star-shapes. After you've pressed down to cut out the shapes, you might need to wiggle the mold back & forth a bit to create a delineated negative space, so that a spatula can fit underneath. :)

Using a spatula, carefully lift each star shape, one at a time, & transfer to corresponding star crusts. Try to line up each star shape so that it lays directly on top of crust. Using a knife scrape away any excess gelatin from sides.

Gently wash berries and thoroughly pat dry. It's very important that the berries be completely dry before you transfer them to the mousse, or else they'll slip right off.  Trust me, this knowledge was gained through previous experience. :) Decorate each tart with berries as shown in above photo, or feel free to create your own design.  Serve immediately.

Yield: Serves 4. (Makes 4 individual portions/tartlets.)

Chef's Notes: Don't worry if you're unable to cut out exactly 4 shapes from the mousse. I could only cut out 3 complete shapes without overlapping the cookie-cutter cut-outs. Just take the remaining mousse, purĆ©e once more in the blender, & then allow the mixture to set for another 20-30 minutes.

The other alternative is to use slightly smaller star-shaped cookie cutter molds to cut out the crusts & mousse. Of course, you won't need to use as many berries. Also, please be aware that this will probably make it slightly more challenging when it comes time to decorate them with fruit. :)

Any excess mousse &/or crust dough can be either used to make additional tartlets or reserved for other dessert ideas. The strawberry mousse tastes really good served on its own or with a dollop of light whipped cream on top.

Chicken recipes are extremely popular in the home kitchen. Today we're making chicken marsala, one of the most popular Italian recipes made with wine.

This simple chicken marsala recipe calls for marsala wine, sherry wine and fresh mushrooms. When choosing fresh mushrooms for your chicken marsala recipes, look for tightly closed caps that don't show any gills.

When cooking with wine, don't spend a lot of money on your cooking wines. But on the flip side, don't buy something that you wouldn't drink straight.

This is what you'll need to prepare this easy recipe for chicken marsala:

Chicken Marsala

4 boneless, skinless chicken breast halves, pounded to about 1/4-inch thickness between two sheets of plastic wrap
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon fresh cracked pepper
1 tablespoon dried oregano
8-12 mushrooms, sliced
1/4 cup olive oil
1/2 stick butter
1/2 cup marsala wine
1/4 cup sherry wine

First, pound the thawed chicken breast to about 1/4 inch thickness between two sheets of plastic wrap.

Next, in a 13x9 casserole dish, mix together the flour, salt, pepper and oregano and mix well.

Coat chicken breasts on both sides in flour mixture. Next, heat 1/4 cup olive oil and 1/2 stick butter in a large skillet over medium-high heat. When butter is melted, add the chicken and fry each side until browned, about 3 minutes on each side.

For the chicken marsala sauce, add sliced mushrooms to skillet and pour the wines over the top. Simmer 10-15 minutes, covered, until chicken is cooked through. Serve the chicken and sauce over cooked brown rice and top with grilled asparagus, if desired.

This is fitting because 'Cuz I Felt Like it! lives in said dirty hot south. She has tattoos of fucking Hello Kitty and can't put a thong on properly which immediately labels her as either totally fucking lame or Japanese. She is not Japanese. Her blog is minutely funny so check it out if you feel like wasting your time. Nothing special here folks; Just a bunch of shitty writing and crappy pictures. She also makes amputee teddy bears and sells them on Etsy. So if you are in the market for a bear that will freak out and disturb your child, now you know where to go. Since she is from the south, I dedicate my Blackened Catfish to 'Cuz I Felt Like it! Enjoy.

i am so done with thanksgiving. it was great, nicest one yet we all concurred. but that heavy holiday food. oh my. happily, one light spot on our menu is our traditional thanksgiving persimmon pomegranate mixed greens salad. crunchy, tart, leafy, tasty, acidic counterpoint to the rest of the meal. i invented this salad about 8 years ago and we've been eating it by popular request ever since. at the time, we were living in tiburon, california, with our lovely panoramic views of the golden gate bridge and the bay from our kitchen/living room windows (my that was nice) and locally grown persimmons as well as pomegranates from southern california were abundant in the markets.

luckily, due to the magic of modern food distribution and transport, something i am thankful for every day (and especially at the holidays), i can still get these ingredients, high quality and quite fresh here in connecticut. if i was going to be a locavore, which i never will be, i would have to live in central california i think, or some other equally fertile growing region in the world. i am sure someone from new england did not come up with that locavore concept, had to have been a californian, although i'm just guessing here. i would have to build a greenhouse system to get local food and apparently that has a higher carbon load than shipping food (according to BBC news) from its traditional growing region. i just cant live without grapefruit and avocados and artichokes, chocolate, coffee and tea. or wouldn't want to. anyway, other than the pumpkin pie, (which i have professed my profound love for here on cup and table many many times), this is one of my favorite items on our yearly thanksgiving menu:

pomegranate persimmon salad
serves 6 - 8
12 ounces mixed baby greens, rinsed and dried
1/3 pomegranate, seeds only (about 1/3 cup)
1 large or 2 small fuyu persimmons, peeled and sliced
1 leek, finely sliced

dressing
2TBSP pomegranate cherry juice
3TBSP seasoned rice vinegar
3TBSP extra virgin olive oil
(a touch of dijon mustard or some minced shallots is nice here but i usually skip it because i am overwhelmed in the kitchen at this point) assemble ingredients. whisk up the dressing. pour. toss. serve. bon appetit.

Deschutes Brewery - Cascade Ale
Deschutes Brewery is the Budweiser of Oregon when it comes to distribution. Deschutes Mirror Pond Pale Ale is in just about every bar you walk into in this fine state. It is a damn shame they push that crap instead of their Cascade Ale. The latter is a good bit lighter which gives it more "drinkability" but all the flavor remains. While it is a good bit harder to locate than Mirror Pond, Cascade Ale is worth the search. It is an all around gorgeous summer beer that is perfect for when your lady drags you to the park with the baby. Just slip one of these bad boys in your pocket and the trip might almost be bearable. 4.5 out of 5. Drink it.

Baked Brie & Strawberry

We have spent the last week in the eastern Sierra Mountains in northern California.  It has been a week filled with fresh mountain air and outdoor activities.  We have fished, hiked, rock-climbed, cycled, swam, and relaxed.  Of course, we have been able to enjoy the lively Fourth of July activities that a small town has to offer, almost allowing me to forget that I wasn't in Canada on July 1st to celebrate Canada Day.  Last night was an entertaining fireworks display in the village.  My brother-in-law, who lives here, is a member of the county's Search and Rescue (SAR) team.  This morning, we are heading out to decorate the SAR trucks for the Fourth of July parade.  My kids couldn't be more excited to be riding on the snowmobiles that will be sitting on the SAR float.  I have promised not to elbow any kids out of the way to get to the candy that is being thrown by the float-riders.

As a tribute to our wonderful host, I thought it was time to feature a guest chef.  Who better than my brother-in-law?  Now, he will be the first to admit that he tends to cook rather simply for himself.  However, he appealed to my unwavering devotion to Brie cheese and floored me when he whipped up this appetizer.  By the way, ladies, my brother-in-law is inexplicably single.  Smart, handsome, athletic, generous.  And did I mention that he makes a killer baked Brie?  Need I say more?

Preheat the oven to 375 degrees F.

Pop open a can of crescent rolls.  A sheet of thawed puff pastry would work just as well.  Lay the pastry on a baking sheet coated with cooking spray.  Place a wheel of Brie cheese on the pastry.

Pile 1 cup of sliced strawberries on top of the Brie.

Fold the rest of the pastry over top of the strawberries so that the entire wheel of Brie is covered. Pinch together the seams.

Sprinkle 3 tbsp of brown sugar on top of pastry.

Top with 2 tbsp chopped walnuts.

Place the baking sheet into the oven.

Bake for 15-20 minutes, or until the pastry is light golden brown. Transfer the baked brie to a serving dish. Cut into it and let the glorious Brie ooze out (sigh). Serve with crackers.

Let me tell you, everyone else was lucky that I was in a sharing mood.

1 can crescent rolls or 1 sheet puff pastry, thawed
1 medium-sized wheel of Brie cheese
1 cup sliced strawberries
3 tbsp brown sugar
2 tbsp chopped walnuts
Strawberry to garnish
Crackers

Preheat the oven to 375 degrees F.

Place the baking sheet into the oven.  Bake for 15-20 minutes, or until the pastry is light golden brown. Transfer the baked Brie to a serving dish. Serve with crackers.

Makes one hefty appetizer.

Recipe #30: A Brazilian-Inspired Cocktail -- "The Drink From Ipanema" :)

Mmmmmm, boy, that last recipe made me hungry for more foods from Latin America. This time we'll "travel" to Brazil -- land of Carnaval, samba, soccer (national sports obsession #1), volleyball (probably a close second to soccer, or atleast very high up there on the list!), beautiful beaches, beautiful people, samba, exquisite geodes, Linux, & yes, a nation-wide obsession with the badunkadunk. :-D

For starters, I'd like to suggest a cocktail. :) Now, I realize I'm probably committing blasphemy by listing an alcoholic beverage on a supposed "health food recipe blog," but we can't all live like monks day in & day out. Otherwise, we'll all go diving headlong into a 10 lb. chocolate cake & devour the entire thing in one sitting. ;-) Plus, it's my blog & I can do with it what I want. If I want to list a cocktail recipe on my blog, or an occasional dessert that's not entirely low-fat or low-anything, then I'm bloody *#@$% well going to do it. So there!

While I'm admittedly more of a "once in a blue moon" kind of drinker & make a practice of abstaining while training (for obvious reasons!), I never claimed to be a teetotaler either. After all, a little enjoyment of spirits here & there is something of which most of us like to partake. And now for that cocktail recipe:























"The Drink From Ipanema"

Ingredients:
5 oz. guava juice
splash of triple sec
splash of blue CuraƧao

Directions: Pour the ingredients into a cocktail shaker filled with ice. Shake well. Strain into a chilled cocktail glass. Garnish with a lemon or lime. For extra visual effect, float a single rose petal on top of each drink.

Yield: 1 cocktail.

Hawaii is known for its white sand beaches, tropical climate and fun water sports. But any food lover wil tell you that the real draw on Oahu is the fresh garlic shrimp, served at roadside shrimp trucks along the North Shore.

Chef Jason Hill shows you how to make garlic shrimp scampi modeled after the famous shrimp shacks in Kahuku.

At our favorite stop, Giovanni's shrimp truck, in Kahuku, each plate includes 12 shrimp with two mounds of steamed sticky calrose rice and a lemon wedge. We hope you enjoy this — it's almost a perfect replica of Giovanni's shrimp.

Hawaiian Shrimp Truck Scampi

10 shell-on U-15 (extra large) shrimp, deveined
1 head (10 cloves) garlic, peeled and roughly chopped
1 cup flour
2 tablespoons paprika
1/4 teaspoon cayenne pepper (1 tablespoon for spicier tastes)
1/2 stick clarified butter (see our video recipe)
1/2 teaspoon salt
1/8 cup white wine
2 tablespoons regular butter

To begin, rinse and thaw your large shrimp in cool running water. Lightly pat dry. In a wide tupperware dish, place the flour, paprika and cayenne pepper. Mix lightly with your hands and coat each piece of shrimp on both sides.
Heat saute pan over high heat.

Add clarified butter and garlic. Stir for 1 minute, then add all of the shrimp, which has been coated in the flour mixture. Saute 3 minutes on each side.

After 3 minutes on the second side, add the 1/8 cup of white wine and 2 tablespoons butter. Saute, turning shrimp occasionally, until it reaches a caramel brown color.

Remove shrimp immediately and serve with two mounds of sticky steamed calrose rice and a lemon wedge, spooning extra garlic butter sauce over the rice and shrimp. Add extra salt and cayenne pepper to taste if desired.

Makes 2 servings of 5 jumbo shrimp each.

Chef's Note: You leave the shell on only during the cooking process. This keeps the shrimp tender and moist. Afterward, you peel and eat them, topped with the buttery garlic sauce and sticky rice.

Strawberry Shortcake

What's more American than strawberry shortcake?  Well, maybe apple pie and baseball. However, when I think of the Memorial Day or July 4th long weekends, strawberry shortcake is the dessert that springs to mind.  Even though I'm Canadian by birth and in my heart, I hope that living in the U.S.A. for the past 14 years gives me enough honorary American status to be able to feature this dessert.

This fabulous dessert - and believe me, I couldn't stop patting myself on the back when I tasted it - comes straight from the pages of Dorie Greenspan's cookbook Baking: From my home to yours.

Preheat the oven 425 degrees F and place one of the racks in the center of the oven. Line a baking sheet with parchment paper.

Strawberry Shortcakes
In a large bowl, whisk together 4 cups all-purpose flour, 2 tbsp baking powder, 3/4 tsp salt, and 6 tbsp sugar.

Cut 1 1/2 stick (12 tbsp) cold, unsalted butter into small pieces and add to the flour mixture.

Using your fingertips or a pastry blender, rub or cut the butter into the flour mixture until there are pea-sized pieces. Be sure to work quickly so that the heat of your hands does not begin to melt the butter.

Add 1 1/2 cups cold heavy cream to the flour mixture.

Using a fork, gently toss the ingredients until the dough begins to hold together.

If there is some flour left in the bottom of the bowl, use your hands to gently knead it into the dough. Do not overmix. As Dorie points out, it's better to have a few dry spots than to overmix the dough, which will make it tough.

Using a 1/3 cup measuring cup, scoop out the dough and place it in loose mounds on the lined baking sheet. Place the six mounds so that they are about 3 inches apart. Press down the dough so that the mounds are between 3/4 inch and 1 inch high.

Strawberry Shortcakes
Place in the oven and bake for 15-18 minutes, turning the baking sheet around halfway through baking. When the shortcakes are puffed and give a little when you push on them slightly, remove them from the oven. Remove the shortcakes from the baking sheet and place on a cooling rack.

If you have leftover dough, bake on a cool sheet.

Strawberry Shortcakes
Place approximately 3 cups of sliced strawberries into a medium bowl and mix in about 2 tsp sugar. Let the strawberries macerate for 10-15 minutes. They will begin to release their juices and soften. Yum!

Cut the shortcakes in half horizontally. Place the bottom halves on dessert plates, top with about 1/2 cup strawberries, and spoon on some whipped cream. Garnish with a sprig of mint.
