Recipe #209: Miso-Egg Drop Soup

This soup, which is yet another original creation, is the best of both worlds. To be honest, I actually created it by accident, but it was a happy accident. :) You see, I was making egg drop soup the other day, and in the midst of cooking, realized that I didn't have any chicken stock or bouillon on hand, (which is the traditional base for this soup). I only had miso paste. So, I added that instead. Et le voilà. A new creation was born: Miso-egg drop soup. :)

When we stop in at our favorite Chinese restaurant for the lunch special, which includes a choice of either egg drop or miso soup as a starter, I can never make up my mind which soup to order. So this recipe takes care of that decision. Now it's possible to have both... simultaneously. :)




















Miso-Egg Drop Soup

Ingredients:
1 Tbsp. sesame seed oil
1 c. onion (about 1/4 large onion)
1 1/2 Tbsp. fresh ginger, peeled & finely minced (about 1 1/2" piece)
1/4 c. baby carrots, sliced crosswise into 1/4" thick rounds & then quartered (diced)
6 c. low-sodium organic chicken broth
1 c. water
1 Tbsp. soy sauce
1 Tbsp. cornstarch
1 Tbsp. cold water
1/4 c. dried shiitake mushrooms, broken into 3/4" pieces
1/4 c. strips of dried wakame seaweed, pre-shredded, soaked for a few minutes in boiling hot water, & then drained & halved (or quartered) crosswise into 2-3" strips
1/8 tsp. ground white pepper
2 Tbsp. miso paste with dashi (bonito stock) but without MSG
2 eggs
1 c. silken tofu, diced into 1/2" cubes
1/4 c. scallions (including green stalks), sliced crosswise into 1/4" thick rounds (about 2 large scallions)

Directions: In a large sauce pot, sauté onion, ginger, & carrots in sesame seed oil on low heat until tender, about 5 minutes. Then add chicken broth, 1 c. water, and soy sauce, and bring to a rolling boil. While soup is coming to a boil, add cornstarch to a small, glass (or other heat-proof) custard dish & stir in 1 Tbsp. cold water to make smooth paste, i.e., a slurry. Then slowly incorporate the slurry into the broth, stirring continually until it's dissolved & the soup has become relatively clear. Reduce heat to low & simmer. While soup is simmering, stir in the dried mushrooms & reconstituted seaweed, & season with white pepper. Place miso paste into the same small custard dish you used to make the cornstarch & water slurry. Remove about 1-2 Tbsp. of the soup from its pot and pour over the miso paste, stirring until completely dissolved. Set aside. Beat the eggs together in a separate, medium-sized bowl, using a fork. Gradually add eggs, drizzling a little bit of egg at a time from the fork into the broth while simultaneously & very gently stirring once or twice in the same direction until eggs separate into ribbon-like strips. (Do not overstir or these ribbons will shred into tiny bits.) Remove soup from heat & allow to cool for 5-10 minutes. Then stir in miso mixture, and add tofu & scallions. Serve immediately.

Yield: Serves 4-6.

Chef's Notes: If you can't find miso pasto with dashi and without MSGRecipe #209: Miso-Egg Drop Soup, just combine the no-MSG miso paste with dashi (bonito) soup stock. :) If you use dashi is in its powdered form (i.e., hon-dashi), be sure to boil it together with water first to make an actual liquid soup stock before adding it to the miso paste. :) You'll only need to make a small amount of dashi (i.e., just a few tablespoons), so follow package instructions to ascertain the proper ratio of hon-dashi to water. Use the same method as described above to melt the miso; wait several minutes before pouring dashi over miso.

There are three main kinds of soybean based miso paste -- red (akamiso), white (shiromiso), or mixed (awase) -- but it doesn't really matter which type you use, just as long as it has dashi in it (or added to it). Dashi adds a unique flavor to the soup, but if you can only find miso paste without dashi, that will have to do.

Important note for vegetarians: Vegetarians, please note that, despite any online articles that you may've read to the contrary, seaweed & dashi actually aren't vegetarian foods. Both contain bits of fish in them. Yep, there's a reason they both have that slight fishy, umami flavor. ;) So, if you didn't realize that before, now you know.

As far as seaweed is concerned, it might appear at first to be a vegetarian product, as it's green & is classified as marine algae. However, it often contains small fish or other sea life that definitely aren't plant-based life forms. And no, sea cucumbers don't count as vegetables either. LOL.

The dashi soup stock found in some miso paste varieties also contains lots of fish-y stuff: kombu (dried kelp), wakame seaweed, niboshi (dried baby sardines), & dried, smoked bonito (skipjack tuna). So unless you're a pescetarian (a fish-eating vegetarian), you'll probably want to avoid eating dashi as well.

A real eye-opener, eh?! You learn something new every day....

Chicken recipes are extremely popular in the home kitchen. Today we're making chicken marsala, one of the most popular Italian recipes made with wine.

This simple chicken marsala recipe calls for marsala wine, sherry wine and fresh mushrooms. When choosing fresh mushrooms for your chicken marsala recipes, look for tightly closed caps that don't show any gills.

When cooking with wine, don't spend a lot of money on your cooking wines. But on the flip side, don't buy something that you wouldn't drink straight.

This is what you'll need to prepare this easy recipe for chicken marsala:

Chicken Marsala

4 boneless, skinless chicken breast halves, pounded to about 1/4-inch thickness between two sheets of plastic wrap
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon fresh cracked pepper
1 tablespoon dried oregano
8-12 mushrooms, sliced
1/4 cup olive oil
1/2 stick butter
1/2 cup marsala wine
1/4 cup sherry wine

First, pound the thawed chicken breast to about 1/4 inch thickness between two sheets of plastic wrap.

Next, in a 13x9 casserole dish, mix together the flour, salt, pepper and oregano and mix well.

Coat chicken breasts on both sides in flour mixture. Next, heat 1/4 cup olive oil and 1/2 stick butter in a large skillet over medium-high heat. When butter is melted, add the chicken and fry each side until browned, about 3 minutes on each side.

For the chicken marsala sauce, add sliced mushrooms to skillet and pour the wines over the top. Simmer 10-15 minutes, covered, until chicken is cooked through. Serve the chicken and sauce over cooked brown rice and top with grilled asparagus, if desired.

Celebration Chicken Enchiladas

Oh, the things you learn when you spend a little time browsing through Wikipedia.  I always thought that Cinco de Mayo was Mexico's Independence Day.  Tell me I'm not alone in my ignorance.  Cinco de Mayo actually commemorates the Mexican army's defeat of French forces at the Battle of Puebla in 1862.  Who knew?!  The next time you stun your friends by answering that question correctly during a fierce battle of Trivial Pursuit, you can tell them you learned everything you know from a food blog.

The point of my rambling is to tell you that all this Cinco de Mayo talk gave me a hankering for some enchiladas.  This recipe is from Tyler Florence, one of the Food Network chefs.  My husband loves Mexican food so much that he gazes lovingly into my eyes over any dish that has even 1/2 tsp of cumin.

Season 1 1/2 pounds skinless, boneless chicken breasts (about 4 of them) with salt and pepper.

Do you like the token sprinkles of pepper? I ran out of peppercorns and forgot to pick up more at the store.  You can't see them?  Really?  Time to call the optometrist.  Oh alright, I can't see them either.

Heat a large saute pan over medium heat and add 3 tbsp vegetable oil. Add the chicken.

In a small bowl, mix together 2 tsp cumin powder, 2 tsp garlic powder, and 1 tsp Mexican Spice blend.

Cook the chicken for about 7 minutes per side. Sprinkle the chicken with the cumin mixture before turning it.

When the chicken is cooked through, remove it from the pan and let it cool on a plate. Once it has cooled, shred the chicken with two forks or your hands. If your chicken is cool enough, use your hands. It's much faster and MUCH more fun. I couldn't stop eating the browned bits on the outside while I was shredding. Why does everything that's slightly burned taste so darn good?

Chop 1 red onion and 2 cloves garlic.

Add the onions and garlic to the now-empty chicken pan and saute until soft. You may find that you have to add a couple of teaspoons of vegetable oil.

Defrost 1 cup frozen corn (or use fresh corn if it's in season). Coarsely chop 5 seeded whole green canned chiles and mince 4 seeded canned chipotle peppers. Chipotle peppers have a fabulous smoky scent and flavor. They are smoked jalapeno peppers that come drenched in adobo sauce. Just pull the peppers out of the sauce and mince them. The leftover chipotle peppers and the adobo sauce can be frozen for another use.

Once the onions are soft, add the corn, green chiles, and chipotle peppers. Stir well.

Add one (28 oz) can of stewed tomatoes and saute for 1 minute. If the tomatoes come in slices, break them up with a wooden spoon while cooking.

Add the shredded chicken and stir well.

Cover the bottom of two 9x13-inch pans with a thin layer of canned enchilada sauce. Pour the rest of the enchilada sauce into a wide, shallow container.

Microwave 16 corn tortillas for 30 seconds to soften. This will make the rolling process easier. Although, if you are like me, there will be a huge mess by the end of assembly.

Dip one corn tortilla into the enchilada sauce.

Scoop 1/4 cup of the chicken mixture into the tortilla.

Roll up the filled tortilla (now officially an enchilada) and place it in the pan, seam side down. Repeat with the rest of the tortillas.

Top the enchiladas with 1 cup Monterey Jack and Cheddar cheeses.

Preheat the oven to 350 degrees F. Bake the enchiladas, uncovered, for 15-20 minutes until the cheese is bubbling.

Celebration Chicken Enchiladas

3 tbsp vegetable oil
1 1/2 pounds (about 4) skinless, boneless chicken breasts
Salt and pepper
2 tsp ground cumin
2 tsp garlic powder
1 tsp Mexican Spice Blend
1 red onion, chopped
2 cloves garlic, minced
1 cup frozen corn, defrosted
5 canned whole green chiles, seeded and coarsely chopped
4 canned chipotle pepper, seeded and minced
1 (28-oz) stewed tomatoes
16 corn tortillas
1 1/2 cups canned enchilada sauce
1 cup grated Cheddar and Monterey Jack cheese
Chopped cilantro, chopped scallions, sour cream, and guacamole

Season the chicken breasts with salt and pepper.  Heat a large saute pan over medium heat and add vegetable oil. Add the chicken.

Makes 16 enchiladas.

Recipe #219: Avocado-Olive Dip with Fresh Basil & Sun-Dried Tomatoes

If you're looking for a quick & easy-to-make hors d'œuvre platter to bring to a holiday gathering, here's the perfect party dip to serve alongside cut-up, raw veggies (i.e., crudités). It's something a little bit out-of-the-ordinary, instead of just serving the usual ranch or blue cheese dressing-based dip. Plus, with a lot of crowd-pleasing ingredients, it's bound to be a surefire hit with the guests!


Avocado-Olive Dip with Fresh Basil & Sun-Dried Tomatoes

Ingredients:
1/2 c. avocado, smashed with a fork (about 1 small Haas avocado)
1 Tbsp. freshly squeezed lemon juice
2 Tbsp. Parmesan cheese, shredded
1 Tbsp. fresh Italian flat-leaf parsley, finely minced
1 Tbsp. fresh basil, roughly torn & tightly packed
1 Tbsp. scallions (including greens) (about 1 small scallion)
2 Tbsp. Kalamata olives, pitted & diced
2 Tbsp. sun-dried tomatoes, diced into 1/4" squares
salt, to taste*
ground black pepper, to taste

Directions: Using a fork, thoroughly mash together avocado with lemon juice & Parmesan in a medium-sized bowl. Next add parsley, basil, & scallions & continue to mash until well-combined. Next, add olives & sun-dried tomatoes, season with salt & pepper (to taste), & once more mash everything together. Chill until ready to serve. Dip can be chilled overnight or for several hours if you'd like to make it in advance. Transfer to a small serving dish (i.e., ramekin, glass custard dish) and place into the center recess of a crudité party platter with dividers. Serve & enjoy!

Yield: About 1 c., or 1 ramekin-sized portion.

Chef's Notes: Be sure to add the lemon juice to the avocado mixture right after you scoop out the avocado, which will prevent oxidation, & hence discoloration of the avocado.

*There are already lots of salty ingredients in this dip -- the Parmesan, the olives, etc. -- so use the salt sparingly, or if preferred, simply omit it. I used just a pinch, or 1/16 tsp. to be precise, and found that to be the perfect amount.

Variations: To shake things up, you could also try substituting cracked green olives for the Kalamata olives or try using a mixture of different varieties.

People purporting to be Italian keep leaving comments that 'the original recipe' doesn't cook the eggs, or doesn't use Marsala, or doesn't use Kahlua. However I have been assured by many other Italians that they do. I've done my research and there does not seem to be any 'original recipe', or even any agreed-upon origin of the dessert. But whoever it was who first came up with this I am grateful to them for by any other name it would still taste as sweet ;-)

Pecan Scones

Well I woke up this morning and the woman I had over last night absconded with ALL my muffins. Didn't I tell you they love those dried cranberries? I have coffee, but no breakfast snack. So I am going to make me some scones with pecans. If you do not have a food processor you can still make this but it is rather difficult and I really don't think you can pull it off. So just get your ass up and head to the nearest coffee shop where they employ people who CAN make scones. Just be sure not to be late to your welfare meeting with your social worker. Let's begin:

Pecan Scones Okay so toss 2c flour, 1/4c sugar, 1-1/2tsp baking powder, 3/4tsp salt, and 1/2tsp baking soda into your food processor and mix it on full blast for a little bit. The idea is to turn all ingredients into a single ingredient. This is the key to cooking and the key to life. Don't get it? Don't worry it would make your head explode anyway you peasant. Just keep fucking whistling yankee-doodle all day long.
Pecan SconesOnce all the dry ingredients are mixed add 1 stick of chilled butter that has been cut into little pieces. Use "on-off" turns until you get something that resembles coarse meal as seen above. Then add 3/4c chopped pecans or other nuts and give it a few light turns. Hazelnuts work well too. I know what you are thinking: "why do you always have that stupid shadow in your pictures? are you simple?" Fuck you. I don't have a goddamn production studio idiot. This is my fucking kitchen and if you don't like my lighting you can kiss my fucking ass. Asshole.

Pecan SconesSet the food processor aside but don't disassemble it. Whisk together 1/2c milk, 1/4c sour cream, 1 egg, 1tsp vanilla. Set aside 1-2tbl of this mixture to use later as a glaze. Pour the remaining amount into the food processor.

Pecan SconesTurn the mixture over until most of the flour is combined and the dough is nice and sticky. Before you reach your hand in to pull out the dough make sure you unplug the damn thing. You might end up losing MORE of your fingers to stupidity. It would be a tragedy if you prematurely parted ways with ol' picker. Pat the dough into a disk thingy shape and place on a floured surface.

Pecan Scones In a smooth and light manner roll the dough out into a 9" circle and cut it into eights (eight slices dummy) with a sharp knife.

Pecan Scones Transfer the scones to a greased baking sheet. If you do not use enough flour on your rolling surface your slices will stick to the board and it will result in a mangled mess, which would actually be a good representation of your person.

Pecan Scones Now brush the scones with the reserved wet ingredients and don't forget the backs and the sides (not the bottoms...duh). Sprinkle the tops with a generous amount of sugar. The first time I made these I was conservative on the sprinkled sugar and my lady was like "hey! where's the sugar?" to which I replied "I got your sugar right here baby."

Pecan Scones Bake at 400 deg for 15ish minutes and immediately put on cooling rack. "Where are the other two scones? Did you burn them." Shut the fuck up! They wouldn't fit on the damn rack dumbass.

Peacock From a Melon

This lesson was made for my carving class.

To make a peacock like this one you take a melon, some grapes and an orange. A regular knive is the only tool you need for carving it.


Scratch a melon in a shape of your bird and cut it out.



Make feathers with a bamboo skewer and some grapes and orange slice. Insert feathers into the melon to complete a peacock train.

Set your bird in a garden. Make flowers from a pepper and callas from cabbage.

Widmer Brewing - '10 Pitch Black IPA

Widmer Brewing - '10 Pitch Black IPAWhen I decided to review this Pitch Black IPA from Widmer, I checked my absurdly massive archives and much to my surprise I had not reviewed any beers from this brewery despite their close proximity to my abode. Probably because most of their beer sucks donkey balls. Amnesia Brewing is right down the street from Widmer and they are WAY better (Amnesia does not currently bottle their beer, or have a website, but soon enough I will do a review on the brewery itself). Occasionally, Widmer comes out with a good limited release brew which is why I picked up this six-pack. Basically this is a nice black ale in its own right. Too bad that in a bullshit marketing move Widmer decided to slap the IPA label on it. I am sure they did this because out here anything that says "IPA" sells like hot cakes while "Black Ales" are marginalized. I don't really blame them since this marketing ploy worked on me and I did enjoy the beer but I still think that it is pretty fucked up. If you do have a chance to visit the brewery on Russell Street be sure to do it in the summer. You can sit outside in the shadow of the Fremont Bridge and drink beer from a huge ass stein (I can't remember the exact size but it is at least 40oz) while smoking fine cigars and conversing with good company. Well, in your case, talking to yourself and updating your twitter about what stupid shit your cats did today. 3.95 out of 5. Drink it.

I was honored when Jen of How To: Simplify asked me to write a guest post for her blog. Her site is filled with recipes and how-to posts that are sure to make your meal preparation easier, not to mention tastier. Considering the name of her blog, I figured now was not the time to prepare something that required three days of simmering or a list full of esoteric ingredients. When you can make something tasty and impressive within 30 minutes, why slave for days? This puff pastry tart is loaded with asparagus, tomatoes, and feta cheese. So I've decided that every now and then, "Meatless Week" may include fish, because sometimes just beans won't do. Here's a new way to prepare Tilapia, with a great side dish. You'll notice that this meal doesn't have a lot of carbs,but when you eat it, you'll forget you noticed that!

BONUS: These two dishes can cook together and be ready in 20 minutes. ENJOY.

Ingredients...

...for the Tomato-Dill Relish:
6 roma tomatoes, chopped (or, 2 15oz. cans of diced tomatoes, drained)
2 garlic cloves, chopped
1/2 medium white onion, chopped
2 tablespoons of fresh dill, chopped
White wine vinegar to taste
Salt and pepper to taste
extra virgin olive oil
garlic infused olive oil (optional)

..for the Asparagus side dish
2 bunches of fresh asparagus, chopped
1 pint of baby bella mushrooms
1/2 medium white onion, chopped
extra virgin olive oil
salt and pepper to taste

...for the Tilapia
5 tilapia fillets, halved
kosher salt to taste
pepper to taste
extra virgin olive oil

Recipe #218: Zesty Zaatar Chicken - Zippity, Zangity, Zing!

As promised, here's the recipe for tonight's dinner. Yeah, I know. Another zaatar recipe. :) You can put this stuff on almost anything & it'll taste good, as evidenced by the number of zaatar-based recipes on this blog. :) Can you tell I absolutely adore the stuff?! ;)

Seriously, chicken & zaatar are one of the most heavenly, lip-smackingly delicious combinations ever. The zaatar gives it just the right amount of "zip & zing." Just try it & you'll see what I mean. :)

This recipe is so quick & easy to make that you can make it under 15 minutes flat. Practically effortless. Easy and delicious. Sounds like a winning combination to me!



















Zesty Zaatar Chicken

Ingredients:
1/2 lb. (8 oz.) skinless, boneless chicken breasts, rinsed, defatted, tendons removed, & patted dry
2 Tbsp. plain bread crumbs
2 Tbsp. zaatar spice mix (see recipe)
1 Tbsp. extra virgin olive oil
1 Tbsp. garlic, peeled & finely minced (about 2 large cloves)
1 fresh, large bay leaf (or dried, if unavailable)
1/4 c. dry white wine
salt, to taste
ground black pepper, to taste
2 Tbsp. fresh mint leaves, roughly torn (for garnish)

Directions: Place rinsed, defatted chicken breasts onto a clean, non-porous surface. Cover with plastic wrap & tenderize, pounding with the bumpy, textured end of a meat mallet until 1/8" thick. Cut chicken into 2" wide strips & set aside. Thoroughly combine breadcrumbs & zaatar in a medium-sized bowl. Dip each piece of chicken into the bowl, thoroughly coating both sides. Shake off excess & lay onto a plate. Repeat this process until all chicken pieces have been breaded. Set aside.

Next, sauté garlic & bay leaf in olive oil in a large (12-13") sauté pan on low heat until tender, about 5 minutes. Stir occasionally. Deglaze with white wine, reducing liquid for just a few seconds before adding chicken. Transfer breaded chicken pieces from the plate into the pan, spacing pieces far enough apart so as not to crowd the pan. Season with salt & pepper, to taste. Cook chicken for a few minutes per side, until breaded exterior turns golden brown on both sides. Watch the pan carefully as tenderized chicken doesn't take very long to cook through & brown, 2-3 minutes at most. When ready, remove from heat & discard bay leaf. Divide into equal portions. Transfer to plates, & garnish with mint leaves. Serve immediately.

Yield: 2 servings.

persimmon pomegranate salad with mixed baby greens
i am so done with thanksgiving. it was great, nicest one yet we all concurred. but that heavy holiday food. oh my. happily, one light spot on our menu is our traditional thanksgiving persimmon pomegranate mixed greens salad. crunchy, tart, leafy, tasty, acidic counterpoint to the rest of the meal. i invented this salad about 8 years ago and we've been eating it by popular request ever since. at the time, we were living in tiburon, california, with our lovely panoramic views of the golden gate bridge and the bay from our kitchen/living room windows (my that was nice) and locally grown persimmons as well as pomegranates from southern california were abundant in the markets.

luckily, due to the magic of modern food distribution and transport, something i am thankful for every day (and especially at the holidays), i can still get these ingredients, high quality and quite fresh here in connecticut. if i was going to be a locavore, which i never will be, i would have to live in central california i think, or some other equally fertile growing region in the world. i am sure someone from new england did not come up with that locavore concept, had to have been a californian, although i'm just guessing here. i would have to build a greenhouse system to get local food and apparently that has a higher carbon load than shipping food (according to BBC news) from its traditional growing region. i just cant live without grapefruit and avocados and artichokes, chocolate, coffee and tea. or wouldn't want to. anyway, other than the pumpkin pie, (which i have professed my profound love for here on cup and table many many times), this is one of my favorite items on our yearly thanksgiving menu:

pomegranate persimmon salad
serves 6 - 8
12 ounces mixed baby greens, rinsed and dried
1/3 pomegranate, seeds only (about 1/3 cup)
1 large or 2 small fuyu persimmons, peeled and sliced
1 leek, finely sliced

dressing
2TBSP pomegranate cherry juice
3TBSP seasoned rice vinegar
3TBSP extra virgin olive oil
(a touch of dijon mustard or some minced shallots is nice here but i usually skip it because i am overwhelmed in the kitchen at this point) assemble ingredients. whisk up the dressing. pour. toss. serve. bon appetit.
