Welcome To My Schizoid Blog ;-)

One minute I'm writing about health food, & the next booze & chocolate? So what's my deal? Well, I've got moods just like the rest of you. And I'm a Gemini. ;-) So, in emoticons, that means you might get either >:) or O:-), depending on which twin decides to check in at the appointed heure de blogging. ;-)

(Speaking of which, I think I'm going to cut out the little figurines from this website & perch them on my shoulder the next time the twins want to duke it out.)

Sometimes I feel like blogging about chocolate-covered goodies & other times, about food that's good for you! So, whichever category you like to read about, stick around, because this blog will have a bit of both!

Now I know I've said on previous occasions that I was going to mainly focus on delicious & healthy, whole foods, but there are times when the >:) in me just has to blog about gourmet goodies too. After all, life isn't all applesauce & oatmeal. ;-)

Buffalo Bacon Quiche

It is time for breakfast and I want some motherfucking quiche. Time to scrounge the fridge and see what we come up with. I have leftover buffalo roast, bacon and cheddar. This should be one sweet ass quiche. Let's begin:

Buffalo Bacon QuicheI am only showing the final picture because by now you should all know how to make a quiche. Still don't know? You have not been reading closely enough, loser. Quiches are flipping amazing and super easy to make: cheese bottom, filling, egg/milk mixture, oven. How fucking hard is that? Alas, I got real lazy with this crust so it is not as nice as they usually are but the filling is what matters the most. Cut your buffalo into bite sized pieces don't just throw a slab of meat in there, dumbass. Be sure to crumble up your bacon too. Oh, and don't forget to breathe. Cook at 375 deg for about 45 min. Eat it.

The Heart Stopper

This morning I had a bizarre craving for a grilled cheese, but not just any grilled cheese; I wanted the sick and unholy "Heart Stopper." What is the Heart Stopper you ask? It is a grilled cheese filled to the brim with various pork products. Today I have bacon and salami so this is going to be some good eating. I only wish I had pepperoni too. "You are one sick piece of shit." Fuck you, you hypocritical dipshit. You know you want it. Let's begin:
The Heart StopperButter one side of a piece of good quality bread (no Wonder bread jackass) and put it face down in a pan (i.e. butter side down genius). Put down one layer of cheddar cheese and then one layer of salami (use up to eight slices). Oh man this is looking good.
The Heart Stopper Make bacon. Add another layer of cheese, four strips of bacon, and finally another layer of cheese. Top with another piece of bread. "Still butter side down?" Are you fucking kidding me? Use some damn common sense, assclown.
The Heart Stopper Grill over medium heat until each side looks like this. Perfect once again. This was one of the best breakfasts I have had in a long time. The spiciness of the salami really complimented my coffee but it was subdued enought that I could still taste the bacon. Eat it.

It's a Keeper: Cheesy Grilled Eggplant SandwichesI'm always on the lookout for good meals that are very easy to make on a weeknight. Cheesy Grilled Eggplant Sandwiches was included in the weekly menu planner section of the August 2008 issue of Every Day with Rachael Ray. It was easily made in 30 minutes.

Now, this isn't a super exciting meal, but it does the job. It's pretty darn healthy, too, since you get your veggie right in the middle of your ham, cheese, and bread.

Here's the recipes with my comments in brackets:

1 pound small eggplants, trimmed and thinly sliced lengthwise
1/4 cup extra-virgin olive oil
Salt and pepper
8 slices Italian bread [I used ciabatta.]
10 ounces jarlsberg cheese, shredded (about 2 1/2 cups) [If you want to save some cash, use some basic swiss, but I think jarlsberg is worth the extra money.]
One 4-ounce package thinly sliced prosciutto [To save more cash, you could substitute ham for the prosciutto.]

1. Preheat a grill to medium. In a large bowl, toss the eggplant slices with 2 tablespoons olive oil; season with salt and pepper. Grill, turning once, until softened, about 4 minutes.

2. Lay the bread on a work surface. Top 4 slices with a layer each of cheese, prosciutto, eggplant and another layer of prosciutto and cheese. Top with the remaining bread slices.

3. Brush the outside of the sandwiches with the remaining 2 tablespoons olive oil. Grill, covered, turning once, until crisp, about 2 minutes.

I had leftovers from that amazing chicken I roasted to I decided to utilize them in a pizza. At first I thought quiche but I didn't know how the BBQ sauce would meld with the eggs. In any case, this was quite possibly the best pizza ever made in the history of the planet. Think you can handle this? Let's begin:
BBQ Chicken, Bacon, Red Onion, and Cheddar PizzaMake a dough. Slather with your homemade BBQ sauce (or in your case, the KC Masterpiece you bought with your food stamps). Top with grated cheddar and then your red onion, chicken, and bacon. Do not put raw meat on the pizza, dumbass. Top with more cheddar cheese.

Let's Play "Cook Around the World"

You might have noticed that this blog is fairly diverse in terms of recipe categories and international cuisines. In fact, you could say that I'm cooking my way around the globe, and that the recipes I post here are a reflection of those journeys. Although my travels have influenced my cooking to a great degree, of course I'm not necessarily talking about literal journeys. It's more of a metaphor. Even if you haven't yet travelled the globe, cooking is one way in which you can "visit" different places without having to pack a suitcase. :)

My motto is, "Life is short, so why only eat hamburgers or mac & cheese?" ;) (Or alternatively, as I wrote in one of my Yelp reviews, "Life is too short to consume bad food & drink." Either one pretty much sums up my attitude about food. :) )

Sometimes I write a recipe because it's an old favorite I'd like to share, and other times I cook and write recipes to explore. While I've both tasted & cooked a wide variety of cuisines, there are also some dishes I cook precisely because I've never made or tasted them before.

You can blame it on my curious and often impatient Gemini nature; I can barely stand in one place for too long, let alone cook the same thing in the same week or even in the same month. There has to be something new to catch my fancy. I require constant newness and excitement. :)

Also, there has to be a challenge in it somewhere, or I'm just not gonna hang around for very long. By the time I've cooked one thing or mastered a new technique, I'm already moving on to something new.  For me, it's all about continual learning and improvement. If the mind isn't being stimulated in some way, I find it hard to stay interested. It's not necessarily that I get bored easily but rather that I can't stand making something if there's no progression or lesson in it somewhere. Translation: I don't retread old ground. Been there, done that; time to move on & do something new.

By the same token, I don't do ordinary. :)  But that's probably already patently obvious from the recipes displayed on this blog.

Recently, a friend of mine jokingly said to me, "So what's wrong with a hamburger?" Nothing. Nothing at all. I like a hamburger every now & then, just like a lot of other people. Now, admittedly, I don't recall the last time I'd consumed 'said hamburger,' but nonetheless, I do enjoy eating them. :) (If you haven't noticed, I've been on a cooking spree as of late, testing out the many new recipes I've recently created, so we haven't been going out all that often.)

Actually, I did have a spicy black bean burger the other night for dinner, but I'm sure that technically doesn't count in his mind. :) If you're going by the strictest definition, burger = actual meat products. Haha.

The thing is if I'm going to list a hamburger recipe on this blog, it's not going to be comprised of just "meat and some seasoning." :) It's going to be a gourmet hamburger with fresh herbs and spices, and a little something extra to captivate one's interest; there has to be a special little twist somewhere in the recipe; otherwise, why post something here that's already been done before?! I gotta stay true to my promise of "100% original recipes," right?! :) Anyhow, creativity is all about the new and the original.

As most of you surely know by now, I like to make things from scratch using only fresh ingredients. Processed foods aren't in my repertoire. And likewise, you will rarely, if ever, see a processed food item listed as a recipe ingredient on this blog.

Some people might think that that's being a tad masochistic or extreme, but I'd disagree. To me, it's worth it to put in the effort and eat something fresh and tasty. Moreover, it's healthier.

Sure, there are some nights when the only thing I'm inspired to cook is a boiled egg, but at least that boiled egg is a whole food that's 100% fresh. ;)

However, lately I've been feeling excited once more about cooking, so I'm gonna go with it, that is, until I run out of steam and start making boiled eggs again for dinner. :) I'm gonna ride this wave of inspiration for all it's worth!

I'm sure there are a lot of people who probably think I'm insane for eating & cooking this way, (no, scratch that, actually, I know this, because there are people who've already expressed this to me!), but let me say it again: I'm gonna do my own thing, and they can do theirs. :)

And, as I said before, I don't really think I'm all that extreme. It's not like I'm advocating that people go on some nutty meal plan where they only eat grapefruits & eggs all day, or go on one of those all-protein or all-carb diets. Now those people are insane, not me. :)

Healthy eating is about proper nutritional balance and common-sense eating behaviors. To my mind, it's also about eating as many fresh, whole foods as possible, and also limiting the number of harmful chemicals I put into my body. The body is a temple, and all of that.

While I don't need external validation to reinforce my point of view, it's nice to know that there are others who get what I'm trying to do here and also on my running blog. I've never hidden the fact that I'm here to push the envelope and introduce new ideas, not to keep doing the same boring thing over and over again until I & everyone else around me wants to scream. Dogs chase their tail around in circles, not humans. :)

Comfort zones aren't locked into place; at one point, those foods and behaviors that we now call our "comfort zone" were once new to us. They only became that way over time, because we allowed them to enter our circle of contentment. As I get older, I notice that this circle has grown larger, not smaller. I have learned to accept more new things into my life, not less. I realize that this probably goes against the "aging stereotype," but I'm OK with that. My sister and I used to joke that we'd be the sort of grannies who'd be hotrodding around in red Porsche 911's at age 80. :) I don't plan to start acting "old" as I get older, nor do I plan to make the same meal every Tuesday. No thanks. Think I'll stick to the current menu -- variety & excitement, done with a youthful outlook & a unique style that's all my own. :)

Another reason why the recipes on this blog are so diverse is that, as I write my cookbook, I'm consciously thinking about how to set my cookbook apart from all of the other cookbooks already out on the market. I figure that if I can provide recipes that are not only original and unique, but also showcase some of the "less commonly known" dishes, that this cookbook will truly present something new to its readership.

This is also why I'm attempting to include as many different regional and (inter)national cuisines as possible, both here on this blog and in the cookbook I am currently writing.

While I generally try to write recipes which are amenable to the average American palate, I do realize that sometimes some of these recipes and/or cuisines might not always be familiar or accessible to some. If you haven't realized by now, that's actually the point. :) I want people to discover new and unfamiliar things here, and to get excited about making & eating something that they might not have tried before. This blog serves as both a recipe respository, and as an introduction to cuisines of different lands and cultures.

I'll admit it, there are also times when I don't necessarily want to think about whether or not the recipes I create are accessible. I don't want to do the mundane or the expected; I want to be daring and go off the deep end. I want to create novel and unusual recipes that I want to eat, even if nobody else does. :) Maybe there will be a few brave souls that will come along with me for the adventure, but if not, I'm honestly not too worried about it. It'd be impossible to please everybody, so I'm not going to even try. Regardless, playing it safe isn't an option. :)

On that note, there are times when I have literally no idea what I'm going to write or create next, and frankly, that's the way I like to do things much of the time, because it keeps things fresh & exciting, and also keeps me on my toes. I often create recipes from the top of my head; sometimes these recipes are for dishes that already have a given name (like caponata, etc.) and then sometimes I make up names for completely new dishes that have no existing precedent. Creating names out of the blue is a real blast; I have so much fun naming the different dishes. :)

Sometimes, I've got a basic outline for a recipe -- i.e., ideas I've scratched out on paper before I enter the kitchen, a general list of possible, future recipe ideas, or a list of recipe requests that are generated by way of the various recipe challenges I've posted on this blog, etc. -- but most of the time I'm just winging it.  The more spontaneous the better. :)

real excitement at the grocery today. a wonderful tart sweet fruit we can never ever find appeared today. barely edible-looking cape gooseberries are a wonderful treat. and they are nothing like regular gooseberries from the farmer's market in the summer. a completely different animal (berry). whenever the gods of grocery inventory are able to provide them, we will partake. usually we see them in london. we clearly have a serious exotic fruit habit in this household. in defense i can say only that there are far worse vices. seriously.  cape gooseberries look like a cross between a tomatillo and and an orange cherry tomato. but they taste like a cross between a passion fruit and a guava and a tomatillo. or something like that. high in vitamins a and c, iron and phosphorous. great in fruit salad. or on their own. store in the fridge. okay, all this talk about cape gooseberries... i am going to go and eat a few right now. so pleasingly tart.

Recipe #70: Frozen "Banana Coconut Cream Pie" Custard

Here's another newly-minted, original recipe, from my kitchen to yours. It's especially great for using up left-over bananas. :) Enjoy!


Frozen "Banana Coconut Cream Pie" Custard

Ingredients:
2 frozen bananas
1 tsp. vanilla
juice of 1/2 a lemon
1 tsp. honey
shredded coconut, to sprinkle on top

Directions: Toss all ingredients, except for shredded coconut, into a blender & pulse until thick & creamy.  Dole out into small glass dishes & garnish with shredded coconut.

Yield: Makes 2 servings.

Chef's Notes: This recipe literally takes less than 5 minutes to make.

I highly recommend using the low-fat version of cream of coconut.  Coco Lopez's Cream of Coconut Lite has 3.5 grams of fat per 2 Tbsp. (i.e., 1 fl. oz.), as compared with their regular version, which has 5 grams of fat.

You might recall seeing a similar recipe here on this blog; this is a slight variation on that earlier banana custard recipe.

This simple chicken marsala recipe calls for marsala wine, sherry wine and fresh mushrooms. When choosing fresh mushrooms for your chicken marsala recipes, look for tightly closed caps that don't show any gills.

When cooking with wine, don't spend a lot of money on your cooking wines. But on the flip side, don't buy something that you wouldn't drink straight.

This is what you'll need to prepare this easy recipe for chicken marsala:

Chicken Marsala

4 boneless, skinless chicken breast halves, pounded to about 1/4-inch thickness between two sheets of plastic wrap
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon fresh cracked pepper
1 tablespoon dried oregano
8-12 mushrooms, sliced
1/4 cup olive oil
1/2 stick butter
1/2 cup marsala wine
1/4 cup sherry wine

First, pound the thawed chicken breast to about 1/4 inch thickness between two sheets of plastic wrap.

Next, in a 13x9 casserole dish, mix together the flour, salt, pepper and oregano and mix well.

Coat chicken breasts on both sides in flour mixture. Next, heat 1/4 cup olive oil and 1/2 stick butter in a large skillet over medium-high heat. When butter is melted, add the chicken and fry each side until browned, about 3 minutes on each side.

For the chicken marsala sauce, add sliced mushrooms to skillet and pour the wines over the top. Simmer 10-15 minutes, covered, until chicken is cooked through. Serve the chicken and sauce over cooked brown rice and top with grilled asparagus, if desired.

Eggplant & Polenta Stacks with Fresh Basil Sauce

I warned my family that if they continued to roll their eyes at me, eventually their eyes would stick in that position. Well, they couldn't stop and I can't say that I blame them. All they heard from me for about an hour was, "Aren't these so cute?", "Look at how pretty they are!", and "Oh my goodness, these are so good!" I should be lucky that all they did was roll their eyes. If I were them, I would have shoved me outside and locked the door.

Last week, I received an email from Nick of Macheesmo and was excited to learn that I was chosen to be a competitor in this month's Foodie Fight. Six food bloggers were chosen to battle "for fame not fortune", using this month's ingredients of eggplant and white wine. I was inspired by some beautiful Japanese eggplants that I found at my local Asian market, and a polenta appetizer recipe that I saw in Fine Cooking magazine, though I guarantee that this recipe is all my own. I cooked the polenta with a combination of water and white wine, which added a lovely flavor. The polenta was then divided; one half was flavored with a roasted red pepper puree and the other with Parmesan cheese. The flavored polenta beautifully complimented the gently grilled eggplant and accompanying fresh basil and garlic sauce.  

The polenta:
Heat 1 cup white wine and 1 2/3 cups water in a medium sauce over high heat.

Seriously, there's water and wine in there. You were thinking that either I was losing my mind or you needed to get your eyes checked, weren't you? I just wanted to mess with you.

Bring to a boil and add 1 cup polenta.

Lower the heat to medium and cook, stirring constantly, until the polenta is very thick, about 15 minutes. Season with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper.

Divide the polenta in half and place in two bowls. To the first bowl of polenta, add 1 tablespoon butter, cut into small pieces, and 1/4 cup (1 oz) grated Parmesan cheese. Stir well.

To the second bowl of polenta, add 1 tablespoon butter, cut into small pieces, and 1/4 cup roasted red pepper puree. Stir well. I roasted one red bell pepper, took the charred skin off, and pureed it in my blender. If you have not previously roasted a pepper, check out my how-to on the subject.

Line a baking sheet with plastic wrap. Pat the Parmesan polenta into one corner of the baking sheet. The square should be about 1/2-inch thick. Pat the red pepper polenta beside the Parmesan polenta. They should be equal in height. If the polenta sticks to your fingers as you're patting it, dampen your fingers slightly.

Cover the polenta with plastic wrap and let it rest in the fridge for at least 3 hours and up to 2 days.

The basil sauce:
Now, you can easily make this sauce in a food processor in about 30 seconds flat. However, I was feeling rather self-righteous and decided to make the sauce (really a pesto) with a mortar and pestle. I was channeling my inner Italian nonna. This method give the pesto a much different texture than when you puree it.

Chop 2 cloves garlic and place it in the mortar with 1 teaspoon kosher salt.

Slowly and evenly grind the garlic and salt until a paste forms.

Using 2 cups of fresh basil leaves (lightly packed), add a few basil leaves at a time to the garlic paste. Do you think I could have chosen some better basil leaves to show you?

Slowly grind the basil leaves to form a paste. Yeah, I know, I'm testing your eyes again. Green basil in a green mortar do not a good photo make.

Slowly stir in 3 tablespoons of extra-virgin olive oil. Season to taste with salt and pepper.

Set the pesto aside.

Preparing the eggplant:
Heat a grill to high.

Cut an Asian eggplant into six 1/2-inch slices.

In a small bowl, combine the eggplant rounds, 1 tablespoon olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper.

Place the eggplant slices on the prepared grill and cook for 2-3 minutes on each side, or until the eggplant rounds are tender. Set aside.

Building the stacks:
Preheat the oven to 300 degrees F.

Remove the polenta from the fridge and, using a circle cookie cutter approximately the same diameter as the eggplant rounds, cut out six circles of the red pepper polenta and place them on a baking sheet.

Place one eggplant round on each red pepper polenta round.

Cut out six rounds from the Parmesan polenta and place them on top of the eggplant rounds.

With a very small spoon, carefully scoop a small pieces of polenta out of the top of each polenta stack. Fill each hole with 1/2 teaspoon goat cheese.

Place the baking sheet in the preheated oven and cook until the polenta is warm and the cheese is melted, 7 to 8 minutes.

Serve each stack on a plate with several dollops of the basil sauce. Stick a small basil leaf in the melted cheese of each stack to garnish.

Polenta:
1 cup dry white wine

1/4 cup (1 oz) grated Parmesan cheese
1/4 cup pureed roasted red bell pepper

Basil Sauce:

Salt and pepper to taste

Eggplant:

It's a Keeper: Marinated Flank Steak with Sweet-Hot SlawDude, I really need to work on my photography skills because Rachael Ray's recipe for Marinated Flank Steak with Sweet-Hot Slaw is sooooo much better than my picture of it. This recipe comes from the 30 Minute Meals section of the September 2008 issue of Every Day with Rachael Ray.

What initially drew me to this recipe was the short ingredients list. What will keep me coming back to this recipe is the flavor. As a bonus, it was a piece of cake to prepare, with only a reasonable amount of chopping and slicing. This is perfect for a weeknight break from the old chicken and rice.

Here's the recipe with my comments in brackets:

1/4 cup sugar
1/4 cup rice wine vinegar
One 1-inch piece ginger, sliced
1 clove garlic, crushed
1/4 cup plus 2 tablespoons tamari (dark soy sauce)
2 teaspoons cumin
1 pound napa cabbage, shredded
2 bell peppers in varied colors [I went with red and orange], thinly sliced
1 red jalapeño chile or Thai chile, finely chopped [It was red for me, since there's nothing called a Thai chile in my store]
2 pounds flank steak [I cut the recipe in half and only made one pound of flank steak, but I made the whole recipe for the slaw]
Grill seasoning
2 tablespoons extra-virgin olive oil (EVOO)
Juice of 2 limes

1. In a small saucepan, dissolve 2 tablespoons sugar in the vinegar over low heat. Stir in the ginger and garlic. Transfer to a bowl and add 2 tablespoons tamari and 1/2 teaspoon cumin. Let stand for 2 minutes, then discard the ginger and garlic. Add the cabbage, bell peppers and jalapeño; toss.

2. Preheat a grill or grill pan to high. Season the steak with grill seasoning. In a shallow dish, combine the remaining 1/4 cup tamari, 2 tablespoons sugar, 1 1/2 teaspoons cumin, the EVOO and lime juice. Add the steak, turn and let marinate for 10 minutes. [It seems like a short amount of time, but 10 minutes really does do it.]

3. Grill the steak, turning twice, about 12 minutes for medium-rare. Let rest for 5 minutes, then thinly slice against the grain and serve with the slaw.

As far as the total number of points polled were concerned, Casillas was streets ahead of his nearest rival - the Whites skipper gained 304 points while Inter Milan keeper Julio César came second with 124 Completing the top three positions was Chelsea goalkeeper Peter Cech, while other Spanish players appeared lower down the order - Victor Valdés came sixth with 38 puntos, David De Geta, came in at 17th place just ahead of Pepe Reina. Iker has dominated the IFFHS annual listing on a regular basis over the past few years and that can provide no clearer argument that the Whites' number one, is simply, the best.
