Chipotle Baked Burritos

"What?!? Fucking Mexican food again? What the hell?" Sorry douche bag but you are going to have to live with it. Sorry I didn't make some Frenchie poofter dish with hints of lavender or some other bullshit like that. Since you can't cook anyway what the fuck difference does it make? This delightful dish is along the same strain of the enchilada, burrito, and mini quesadilla but with one twist: chipotle. Let's begin:

Chipotle Baked BurritosDice up three canned chipotle peppers and mix with 1/2c sour cream. If you wish, you can also add some of the sauce from the can. If you are a total sissy you can use fewer peppers. Let it sit for a few minutes.

Chipotle Baked BurritosAdd one can of beans, one can of corn, and an assload of cheddar cheese. Stir really well. Roll into burritos and place in a shallow casserole dish. You can tell it is shallow because it wears slutty clothes and hangs out at trendy nightclubs. Bake at 350 for 15 minutes.

Chipotle Baked Burritos Top with salsa and more cheddar cheese. Remember to use pot holders while handling the hot dish, dumbass. Return to oven for another five minutes. "Do I count the time it takes to put the salsa and cheese towards the total cooking time?" I really need to get new friends. I am sick and tired of these asinine questions that I am partially convinced are just asked to get a rise out of me. You already know the answer jackass, and if you don't you have no business cooking in the first place.

Chipotle Baked Burritos Dinner is served. Garnish with some fresh cilantro and you have yourself another crappy Mexican dinner. You know you love it. Eat it.

So you probably missed it because you were too busy attempting to hide all your cats after your neighbors finally called animal control on you, but I asked my peoples on twitter and facebook what blogs they might have and what else they read on the interwebs. I got a lot of good responses and one was Anger Burger. Even though her layout is really annoying, this chick knows what the fuck she is talking about and does an excellent job of translating it into words. She does a lot of that Asian crap that I don't even attempt so if you desire a recipe for dog meat wontons head over there. Overall I give her an A- but only because no one deserves an A. Read it.

Now I know Barby of Meh is just way too modest & doesn't want me to make a big deal of the award she recently gave me, but nonetheless, I'm going to jump up & down & get just as excited as I did when I got my very first award.

well. here we are. it is a new year. it is the year of the ox. we have a new leader. it is a fresh clean slate for everyone. (plus it is friday, woo hoo for friday) 

this friday's picture is an adorable truck i found parked behind my hotel in tokyo. it is a garbage collection truck. it is really cute. it is immaculately clean. it has that way cool broom on board. everything is so tidy in japan. it makes me wonder why our garbage collection trucks here in america, that great land of opportunity, look, well, considerably worse. shame on you filthy american garbage trucks. clean up your act. positive change can happen. right here.

Peacock From a Melon

This lesson was made for my carving class.

To make a peacock like this one you take a melon, some grapes and an orange. A regular knive is the only tool you need for carving it.


Scratch a melon in a shape of your bird and cut it out.



Make feathers with a bamboo skewer and some grapes and orange slice. Insert feathers into the melon to complete a peacock train.

Set your bird in a garden. Make flowers from a pepper and callas from cabbage.

Hopworks Urban Brewery - Deluxe Organic Ale
HUB has been around Portland for at least a couple of years but this is the first time I have seen their brews in bottles. I picked up this particular beer because I figured it would be super easy to trash on if it sucked. I had a whole rack of DOA and organic jokes at the helm but unfortunately I cannot use them. This beer is awesome. It is a unique ale that is perfectly balanced but it also has a high alcohol content. Bravo HUB. This beer is the shit. I really don't give a rat's ass it is organic and I don't like the fact you have propaganda on your label telling me to ride my bike, but this beer is the bomb. 4.5 out of 5. Drink it.

Perfect Pumpkin Cheesecake Recipe for Tasty Kitchen

If you have been searching for the perfect dessert to grace your Thanksgiving table, search no longer. This is my first attempt at baking a full cheesecake and, besides a few cracks in the top, this pumpkin version turned out beautifully. So beautifully, in fact, that the entire thing was devoured within two days. This recipe is from one of the Tasty Kitchen members (The Pioneer Woman's community recipe site) and it certainly lives up to its name.

Title: Betty's Seasoned Oven-Baked Fries Recipe

In this video, Betty demonstrates a tasty low-fat alternative to French fries--her Seasoned Oven-Baked Fries. Spiced with Italian spices and baked until crisp, you'll never miss the fat!

Ingredients:

1 cup Italian-seasoned breadcrumbs
28 oz. package frozen steak fries 3 eggs, well beaten
2 tablespoons butter or margarine, melted
cooking oil spray

In a medium-sized mixing bowl, beat 3 eggs, using an electric mixer. Set aside. Place 1 cup seasoned breadcrumbs in a gallon-sized zip-lock plastic bag, and set aside. Spray a 15-inch by 10-inch baking pan with cooking oil spray. Dip steak fries, a few at a time, into beaten eggs. Place the dipped fries in the bag of breadcrumbs. Close the bag and shake until the fries are coated. Place fries in a single layer on prepared baking pan. When all fried are coated, drizzle melted butter or margarine evenly over the top. Bake at 400 degrees for 18 to 20 minutes, or until crisp and golden. Remove from pan to a nice serving plate, and serve immediately. These taste as good, or even better, than regular French fries, but have so much less fat!—plus, they are *so* easy to make!

Title: Betty's Hot and Tasty Onion Rings Recipe

In this video, Betty demonstrates how to make a terrific appetizer, her Hot and Tasty Onion Rings. These are served with Betty's Surfin' Seafood Cocktail Sauce or ketchup.

NOTE: IF YOU ARE NOT COMFORTABLE WORKING WITH HOT OIL, PLEASE DO NOT TRY THIS RECIPE.

Ingredients:

1 cup self-rising flour
1 egg, well beaten
1 cup milk
1/4 cup vegetable oil
onions, washed, dried, cut into rings and separated
2 inches of cooking oil in a deep fryer or pot on the stove (I used peanut oil.)

In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your raw onion rings prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip onion rings in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several onion rings at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all onion rings are fried and removed, pat the upper side to remove any further excess oil. Now, place the Onion Rings on a nice serving dish, and serve with Surfin' Seafood Cocktail Sauce. Recipe #205: Dill & Sun-Dried Tomato Omelette -- Simply Dill-icious! :)

This is a simple but tasty recipe that takes only a modicum of effort. Perhaps that's why there are so many omelette recipes on this blog. Hahaha.

There are some nights when it's just easier to make an omelette than to start in on an elaborate dinner production. Those of you who've come back tired from a hard day's work & just want to kick your feet on the sofa not long after dinner, this is the recipe for you. :)




















Dill & Sun-Dried Tomato Omelette

Ingredients:
4 eggs
1 Tbsp. "lite" non-dairy creamer
salt, to taste
cracked black pepper, to taste
1 Tbsp. fresh dill, finely minced
1 Tbsp. fresh Italian flat-leaf parsley, finely minced
2 Tbsp. shallots, finely minced
2 Tbsp. sun-dried tomatoesRecipe #205: Dill & Sun-Dried Tomato Omelette -- Simply Dill-icious! :), julienned
1/2 Tbsp. unsalted butter, to season pan

Directions: Beat together eggs & creamer in a small bowl. Then add salt & pepper, dill, parsley, shallots, & sun-dried tomatoes & thoroughly whisk together. Set aside. In a large (10"), nonstick sauté/omelette panRecipe #205: Dill & Sun-Dried Tomato Omelette -- Simply Dill-icious! :), melt butter on high heat. Then reduce heat to low & pour in egg mixture. As soon as the omelette starts to set, lift up omelette on one side to check its underside to see if it's ready to be folded over. When ready, fold omelette over & continue to cook until desired color (i.e., light golden brown, etc.) has been reached. Then flip over & cook a few seconds more on the other side. (Cooking time may vary depending on how you like your omelettes.) Transfer to plate(s) and serve hot or warm.

Yield: Makes 1-2 servings.

Chef's Notes: Make sure you do not fold the omelette prematurely, as this will make it harder to flip the omelette later, & thus, also harder to cook it evenly. Also, depending upon your stovetop range, you might need to alter the cooking temperature in order to get the best result(s). I have a gas range & cook with Caphalon cookwareRecipe #205: Dill & Sun-Dried Tomato Omelette -- Simply Dill-icious! :), both of which conduct heat very well, so the food tends to cook very quickly. Hence, this is why I cook my eggs over low heat. However, this may or may not work for you. Adjust accordingly.

Another useful tip: You might've noticed that when you beat eggs together in a bowl and then lift up the bowl, you'll usually find a "ring of egg" left behind on the counter top. To avoid this, simply place the bowl inside of another bowl. This works even better than a paper towel, which will typically stick to both the bowl & the countertop after soaking up the egg. ;)

Hawaii is known for its white sand beaches, tropical climate and fun water sports. But any food lover wil tell you that the real draw on Oahu is the fresh garlic shrimp, served at roadside shrimp trucks along the North Shore.

Chef Jason Hill shows you how to make garlic shrimp scampi modeled after the famous shrimp shacks in Kahuku.

At our favorite stop, Giovanni's shrimp truck, in Kahuku, each plate includes 12 shrimp with two mounds of steamed sticky calrose rice and a lemon wedge. We hope you enjoy this — it's almost a perfect replica of Giovanni's shrimp.

Hawaiian Shrimp Truck Scampi

10 shell-on U-15 (extra large) shrimp, deveined
1 head (10 cloves) garlic, peeled and roughly chopped
1 cup flour
2 tablespoons paprika
1/4 teaspoon cayenne pepper (1 tablespoon for spicier tastes)
1/2 stick clarified butter (see our video recipe)
1/2 teaspoon salt
1/8 cup white wine
2 tablespoons regular butter

To begin, rinse and thaw your large shrimp in cool running water. Lightly pat dry. In a wide tupperware dish, place the flour, paprika and cayenne pepper. Mix lightly with your hands and coat each piece of shrimp on both sides.
Heat saute pan over high heat.

Add clarified butter and garlic. Stir for 1 minute, then add all of the shrimp, which has been coated in the flour mixture. Saute 3 minutes on each side.

After 3 minutes on the second side, add the 1/8 cup of white wine and 2 tablespoons butter. Saute, turning shrimp occasionally, until it reaches a caramel brown color.

Remove shrimp immediately and serve with two mounds of sticky steamed calrose rice and a lemon wedge, spooning extra garlic butter sauce over the rice and shrimp. Add extra salt and cayenne pepper to taste if desired.

Makes 2 servings of 5 jumbo shrimp each.

Chef's Note: You leave the shell on only during the cooking process. This keeps the shrimp tender and moist. Afterward, you peel and eat them, topped with the buttery garlic sauce and sticky rice.

Recipe #131: Star-Spangled Strawberry Mousse Tartlets Decorated with Fresh Seasonal Berries

As promised, here's another recipe to celebrate the Fourth of July. This one's a unique creation that you're unlikely to find anywhere else. :) Enjoy!






















Star-Spangled Strawberry Mousse Tartlets Decorated with Fresh Seasonal Berries

Crust Ingredients:
2 c. hazelnuts, crushed
2 Tbsp. honey
2 Tbsp. orange juice
2 Tbsp. ground cinnamon
1 tsp. ground clove
1/2 tsp. salt
unbleached, all-purpose flour (for dusting)

Mousse Ingredients:
1 c. cold water
2 packets unflavored (i.e., Knox) gelatin
2. frozen strawberries
1 c. nonfat plain yoghurt
4 Tbsp. honey

Decorative Ingredients:
40 fresh blueberries, or 10 blueberries per tart
20 fresh red raspberries, or 5 red raspberries per tart

Kitchen Equipment & Supplies:
food processor
blender
non-stick rolling pin
nylon/silicone spatula (the kind used for spreading & scraping ingredients)
large pancake turner (also sometimes called a spatula as well)
5" star-shaped cookie cutter mold(s)
1-2 metal baking tray(s)
aluminium foil
wax paper

Directions: To make crust: Pour hazelnuts into a food processor & pulse until finely ground into almost a flour-like consistency (or as close to it as possible!). Add remaining crust ingredients (except for flour!) and continue to pulse until thoroughly combined. Dough should be thick and stick together; do not over-mix or crust will be too hard when baked.

Remove dough, scraping out remaining bits with a spatula. Form a dough ball & then place it upon a clean even surface that's been uniformly floured. (You might want to first cover your countertop with wax paper to make clean-up easier & faster.) Flour a non-stick rolling pin & and roll out the dough ball until it's about 1/4" thick, always starting from the center outward, to form a oblong shape, long & wide enough to cut out 4 star-shapes. Flour inside walls of star-shaped cookie cutter mold(s) & cut out 4 stars. (If you've only got one mold, you'll obviously have to repeat the cookie-cutting process four-times.) You might need to use a knife or your fingers to cut away the excess dough. If you'd like a thicker crust, take the excess dough & press it into the cookie cutter mold(s) until it's uniformly spread across the inside of the mold(s). (Or, alternatively, reserve dough for another recipe or use to make additional star-shaped crusts for more mousse tartlets.)

When you've finished making the shapes, carefully remove the dough from the cookie cutter(s). You may need to press the cookie cutter(s) down as you lift up the mold to extract the dough. Use a large pancake turner to transfer crusts to a large, aluminium foil covered metal baking sheet. (You may need to use 2 baking sheets if the crusts won't fit onto one sheet.) Place baking sheet(s) into an oven preheated to 350°F and bake crusts for about 15-20 minutes, or until golden-brown.

Please note: The tart dough can be made ahead & refrigerated until you're ready to bake the crust.

To make the mousse filling: While crusts are baking, pour 1 c. cold water into a small sauce pot. Add 2 packets of unflavored gelatin & let stand for 1-2 minutes. Heat on medium-high for 2 minutes, until dissolved. Let cool until gelatin is warm but not piping hot, about 2-3 minutes. While gelatin is cooling, add frozen strawberries, yoghurt, (4 Tbsp.) & honey to a blender. Then add gelatin mixture, using a spatula to scrape out residual gelatin from the bottom & sides of the pot. Pulse until smooth & frothy. Pour into a Pyrex glass or metal 9"x13" pan & refrigerate until gelatin mousse has fully set, about 20-30 minutes.

To assemble the dessertsWhen crusts have finished baking, remove them from oven & let them cool. Set aside. When crusts have cooled enough to touch them, peel them off of foil & using a large pancake turner, transfer to plates.

Remove mousse from fridge and use cookie cutter to cut out 4 star-shapes. After you've pressed down to cut out the shapes, you might need to wiggle the mold back & forth a bit to create a delineated negative space, so that a spatula can fit underneath. :)

Using a spatula, carefully lift each star shape, one at a time, & transfer to corresponding star crusts. Try to line up each star shape so that it lays directly on top of crust. Using a knife scrape away any excess gelatin from sides.

Gently wash berries and thoroughly pat dry. It's very important that the berries be completely dry before you transfer them to the mousse, or else they'll slip right off.  Trust me, this knowledge was gained through previous experience. :) Decorate each tart with berries as shown in above photo, or feel free to create your own design.  Serve immediately.

Yield: Serves 4. (Makes 4 individual portions/tartlets.)

Chef's Notes: Don't worry if you're unable to cut out exactly 4 shapes from the mousse. I could only cut out 3 complete shapes without overlapping the cookie-cutter cut-outs. Just take the remaining mousse, purée once more in the blender, & then allow the mixture to set for another 20-30 minutes.

The other alternative is to use slightly smaller star-shaped cookie cutter molds to cut out the crusts & mousse. Of course, you won't need to use as many berries. Also, please be aware that this will probably make it slightly more challenging when it comes time to decorate them with fruit. :)

Any excess mousse &/or crust dough can be either used to make additional tartlets or reserved for other dessert ideas. The strawberry mousse tastes really good served on its own or with a dollop of light whipped cream on top.

This simple chicken marsala recipe calls for marsala wine, sherry wine and fresh mushrooms. When choosing fresh mushrooms for your chicken marsala recipes, look for tightly closed caps that don't show any gills.

When cooking with wine, don't spend a lot of money on your cooking wines. But on the flip side, don't buy something that you wouldn't drink straight.

4 boneless, skinless chicken breast halves, pounded to about 1/4-inch thickness between two sheets of plastic wrap
1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon fresh cracked pepper
1 tablespoon dried oregano
8-12 mushrooms, sliced
1/4 cup olive oil
1/2 stick butter
1/2 cup marsala wine
1/4 cup sherry wine

First, pound the thawed chicken breast to about 1/4 inch thickness between two sheets of plastic wrap.

Next, in a 13x9 casserole dish, mix together the flour, salt, pepper and oregano and mix well.

Coat chicken breasts on both sides in flour mixture. Next, heat 1/4 cup olive oil and 1/2 stick butter in a large skillet over medium-high heat. When butter is melted, add the chicken and fry each side until browned, about 3 minutes on each side.

For the chicken marsala sauce, add sliced mushrooms to skillet and pour the wines over the top. Simmer 10-15 minutes, covered, until chicken is cooked through. Serve the chicken and sauce over cooked brown rice and top with grilled asparagus, if desired.

Rachael Answers Some QsRachael Ray was interviewed by a reporter from the LA Daily News, who said that Rachael is the "vivacious, energetic, successful 39-year-old is a household name." I was pleased to see that a reporter might actually get it - she said that Rachael's "can-do approach is a big factor" in her success.

Here are a few highlights from the Q and A session:

Q Tell us about your crazy schedule these days.

A We shoot the equivalent of three one-hour episodes a day of “Rachel Ray” (in New York). I’m up at 7 a.m. and get home around 7 p.m. It’s a long day but a lot of fun. When I’m on hiatus, we shoot “30 Minute Meals” and “Tasty Travels.” We do out 285 shows/episodes a year between the three. While I’m on the road, I send pages (of the magazine) back and forth with comments — and I write columns and recipes on the computer whenever I have time. Everything I do for a living is what I’d do on a day off for a normal job.

Q Where is your base?

A I live in the country. My home is in Lake Luzerne, N.Y., and I have a place in Manhattan.

Q What do you like best — your talk show, Food Network shows, magazine, cookbooks, traveling?

A I love them all. I love to travel, I love “30 Minute Meals” because that’s my baby and I love the “Rachael Ray” show because it has an audience.

Q How do you have time to spend with your husband and family?

A I make time. I go home every night and (my husband, John, and I) make dinner together. I talk to my mother every day on the phone and see her when I go upstate.

Q Do you have a staff that helps you develop recipes?

A Never. I write every single one of the recipes and test (each) by making it on air. I have hundreds of opportunities to cook on air. It’s easy to write my food in my head. I (also) write recipes before I send them over to the magazine. The magazine tests everybody’s recipes.

Q Are you concerned with doing calorie-conscious recipes?

A I could care less. If you eat well, you don’t have to count calories.

Q What is your take on quality, seasonal, local ingredients?

A I think it’s terrific that grocery stores are supporting that and bringing in organic and locally grown products. I’d like to see prices lowered on fresh foods.

Q What is your philosophy of cooking and presentation?

A I don’t use any sort of garnish that isn’t an edible (part) of the dish. Look for the food to be as pleasing to the eye as it is for the stomach. Taste is most important. I try to make people find their own happy zone for spices, etc. Develop your palate so a recipe becomes your own. I like heavy spices and herbs — and everything that I eat to have a lot of flavor. I use free-hand equivalents — and I also write that way, instead of spoons.

Summer Cherry & Crystallized Ginger Bar Recipe

My first job, at the ripe old age of nine, landed me in the middle of a cherry orchard in the fruit-laden Okanagan Valley in the interior of British Columbia. Family friends had rented a house for the summer on the shores of the Okanagan Lake and invited me to join them for several idyllic summer weeks. Their daughters and I wiled away the hours practicing circus routines for our generous audience, swimming and canoeing in the lake, and keeping ourselves entertained by spitting on fist-sized rocks and hurling them into the lake for Jeb, the enormous Newfoundland dog, to sniff out and retrieve. No matter how far we hurled our saliva-scented stones, we could never outfox that dog. He came back holding the correct rock in his soft mouth every time.

One day, when we were visiting a local orchard, the man who owned acres of fruit trees saw the slightly harassed looks on the faces of my friends' parents. That will happen after spending a couple of weeks with a couple of 9-year olds and a 7-year old. He offered to pay five cents per basket of cherries that we picked. Despite the flagrant child-labor prices, we accepted immediately. That night, we sat down to figure out how many cherries we would need to pick to save up for our favorite candies at the local store. Of course, those were the days that you could buy a bagful of gummy bears, Pop Rocks, and Fun Dips for a dollar. We tackled our task with relish for a couple of hours each day and, by the end of the week, had a hearty supply of sweets to fuel our even heartier supply of energy.

These crumb bars are based on my Spiked Blueberry Crumb Bar recipe. The rum, however, is replaced with chopped pieces of crystallized ginger, which add a zing of heat to the sweet fruit.

Preheat the oven to 375 degrees F. Spray a 9x13-inch baking pan with cooking spray.

In a large bowl, combine 5 cups of fresh, pitted cherries, 3 tablespoons fresh lemon juice, 4 ounces chopped crystallized ginger, 1/2 cup granulated sugar and 4 teaspoons cornstarch. Set aside.

In a separate medium bowl, combine 1/2 cup each of granulated sugar and brown sugar. Stir in 3 cups of flour, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1/2 teaspoon ground nutmeg. Cut in 1 cup (2 sticks) of cold butter with a pastry cutter or a fork until the mixture is crumbly. Whisk one egg in a small bowl and stir into the flour mixture.

Press half of the flour mixture into the bottom of the prepared pan. Spread the cherry mixture over the crust. Sprinkle the rest of the flour mixture over the cherries.

Bake in the preheated oven for 35-45 minutes, or until the top is light brown. Left the bars cool on a rack and then place the fridge to chill. This will make the bars easier to cut and remove from the pan. Cut into 32 squares and serve.

The Perfect Crust

Do you have a food processor?

No? Use a premade crust from the market. Without a food processor you, especially you, will not be able to pull it off. You just suck that bad. I can do it; You can't. Trust me.

Yes? Follow these instructions for the easiest and best crust ever!

The Perfect Crust
Start with:
1 1/4th c Flour
1/2tsp Salt
one stick of chilled butter (cut into little pieces).
***for a sweet pie (e.g. pecan) add 1/2tbl sugar with flour and salt***
Just throw the flour and salt into the processor and hit it on full blast to mix that motherfucker up. Once you have achieved this difficult task you can add the butter. Use "on and off" turns to turn the mixture into a coarse meal (shown below):

Now that we have made it this far (hopefully), add 3tbl of the coldest water you have access to. If all you have is faucet water it will suffice for your pitiful attempt at making a crust from scratch...just make sure it is cold dummy.

Now slowly but surely increase pulsations ("on-off" turns in case you didn't pick up on that yet) up to the top speed until everything is mixed fully and it looks like this and you can mush it into a disc thing. Too dry? Add another tablespoon of water genius!

After you shaped the dough into a disk put it on a floured surface. If you have granite you can use a CLEAN countertop. Make sure there is ample flour as seen here. Then roll it out in a different diagonal each roll to ensure no cracking and an even roll. NO flipping. That would be retarded. Once you have rolled it out, in order to get the flattened dough into the pie pan without breaking it you have to roll it back on the pin halfway up and then slide it in - just like with a fine lady. This is difficult to describe but even harder to do it and take a picture at the same time so suck it.

So once you get it in the pan it looks like this. Fold the overhang inward all the way around and remove any excess flour but don't kill yourself doing it - it doesn't matter that much. Also don't worry about the crust being even. Only God is perfect. You truly are not.

Now it is time to crimp the edges. It is much easier than you would think. But then again you suck at everything so you will probably find a way to fuck it up. Just shape your fingers as so and go around the edge of the crust. Throw it in the fridge and start working on your filling.

Sick Soup

This soup is sick (i.e. ill yo) and for the sick. I have come down with an illness and need some soup to ease my tormented soul. "Uh oh! What's that in the distance? Is it...could it be...I think it is...The WHAAAMBULANCE!!! wwWHHHHAAAAaawwWHHHHAAAAaa..." Shut up bitch! This is the first time I have been sick in over two years and I am going to eat some goddamn soup. Now since I don't feel like making anything, this soup will be totally easy...like your mom. "Why don't you just open a can of Campbell's?" Nothing gets through to you does it? Let's begin:

Sick Soup First saute 1 onion, 2-4 minced cloves of garlic, 2 bell peppers (red, green, whatever...) and after about five minutes toss in 1tbl of chili powder (the ancho kind but if no ancho use regular), 2 tsp cumin and maybe some Old Bay to be on the safe side. Give it another couple minutes.

Sick Soup This is the hard part: add 1 can corn, 1c salsa, 1 can black beans, 1 can black eyed peas (or more black beans), 1 can stock, 2c water (add more water for a less thick soup), and 1/2c rice. Now don't drain the beans; that juice is the shit! Just throw the whole thing in there but be sure to drain the corn. Oh yeah and make sure to drain the stock...
