So you probably missed it because you were too busy attempting to hide all your cats after your neighbors finally called animal control on you, but I asked my peoples on twitter and facebook what blogs they might have and what else they read on the interwebs. I got a lot of good responses and one was Anger Burger. Even though her layout is really annoying, this chick knows what the fuck she is talking about and does an excellent job of translating it into words. She does a lot of that Asian crap that I don't even attempt so if you desire a recipe for dog meat wontons head over there. Overall I give her an A- but only because no one deserves an A. Read it.
These buffalo blue balls were a key menu item at a bar I used to work at but those idiots used beef. With buffalo, the succulent juices rush forth as you plunge these savory salty balls into your mouth. Once you get a taste you only want more. There is no denying the sheer power and virility of the buffalo blue balls. Let's begin:
Buffalo meat works perfectly for this dish because it is so freaking lean. You can use beef but make sure you get 10% or less otherwise you will fuck it all up. Pure meat and blue cheese is the name of this game. Cup your hand and put a little meat in it. Fill it with blue cheese. Cover it with another piece of meat and roll into a ball. Place on baking sheet. If you cannot accomplish this simple task, I would give up on life.
Bake at 350 deg for 25 min. Sprinkle with more blue cheese. Serve with the fish tacos. Eat it.

The recipe for Turkey-Tortilla Casserole by Allen Smith in the May 2008 issue of Every Day with Rachael is perfect if you are just plain lazy. Let's be honest, since Darcy was born, my days are much more full than they used to be so some nights, I'm completely wiped out. This recipe was in the Weekly Menu Planner, which is a great resource for these lazy night meals.
I really liked this recipe despite the fact that it was surprisingly simple. Sometimes, when a recipe is too simple it makes me a little skeptical. How can it be good when I don't have to work hard on it?
Admittedly, this isn't the most healthy recipe. It's got a ton of cheese, chips, and sour cream. You pretty much toss it all together in a bowl and bake it for awhile. Easy peasy. Here's the recipe with my comments in brackets:
SERVES 6
Prep Time: 20 min
Bake Time: 40 min
2 limes, quartered
1 pound turkey breast cutlets
Salt
1 large onion, finely chopped
One 4-ounce can diced jalapeño chiles, liquid reserved
Two 14.5-ounce cans fire-roasted diced tomatoes [These used to be hard to find, but now even Hunt's makes them. If you can't find them, look in the natural foods aisle for the Muir Glen brand.]
One 1-pound bag tortilla chips, lightly crushed
One 14.5-ounce can chicken broth
1 pound Mexican shredded cheese blend (about 4 cups)
1 cup sour cream, at room temperature
1. Preheat a grill pan to medium-high. Squeeze the limes over the turkey cutlets; season with salt. Grill the turkey until just cooked through, 3 to 4 minutes per side. Let cool, then slice into 2-inch-long strips.
2. Preheat the oven to 375°. In a large bowl, combine the onion, the jalapeños with their liquid and the tomatoes. Add the tortilla chips and turkey and toss well. Transfer the mixture to a greased 9-by-12-inch baking dish. Drizzle with the chicken broth and top with the cheese. Bake until the cheese is golden around the edges, about 40 minutes. Serve with the sour cream.
Check out Rachael Ray's appearance on Martha Stewart's talk show on Friday, November 13. Martha took on the task of teaching Rachael (who we know is not really a fan of measuring) to bake a pie. I can't really tell if Martha is being funny or rude, but that's sort of Martha's signature, isn't it?

There are few things in life that epitomize the excitement of childhood culinary dreams more than an ice cream sundae. It is difficult to pinpoint the exact cause of this excitement. Perhaps it is the endless possibilities of ingredients. Then again, maybe it is the special bowl or glass it is served in. For me, it is the promise of dipping my spoon into the tall sundae glass and the surprise at what combination of flavors I will pull out from the seemingly endless layers. Of course, as the chef of the house, it is my duty to run a quality-control check on each of the ingredients before serving them to my trusting husband and boys. It only took one spoonful of vanilla ice cream for me to determine that it was sufficiently creamy and sweet. One plump cherry popped into my mouth told me that the juicy fruit would seep into the vanilla ice cream effortlessly. The Nutella? It took me at least six or seven swipes of my finger in the container to determine that the creamy hazelnut and chocolate confection was good enough to serve to my family. Just taking one for the team.
When I set the cold treats in front of my boys, they became wide-eyed and emitted various "oo"s and "ah"s. They were respectfully silent as they plowed their way through the sundaes, devouring layer upon layer of melting ice cream, warm chocolate and sweet berries. The childhood wonder has been successfully passed on to another generation and their future sundae dreams will be limited only by their imaginations.
Using four 8-ounce glasses, pour 1/4 cup pitted, sliced fresh cherries into the bottom of each glass.
Next, put in a layer of slightly softened vanilla ice cream, followed by a layer of softened Nutella (soften on 50% power in the microwave for 10 to 20 seconds), another layer of vanilla ice cream, and a healthy drizzle of Nutella. Top with 2 tablespoons sliced cherries. Garnish with a sprig of mint and serve immediately.
10 oz. fresh cherries, pitted and sliced About 1/4 gallon (a little less) vanilla ice cream, slightly softened 3/4 cup Nutella 4 sprigs of mint, for garnish (optional)

READ THIS: Dennis Morgan began working with Neil when he ran the San Francisco office for MCA/Universal Music Group. Neil appeared regularly at the Circle Star Theatre in San Mateo. And they were the most sought after highly prized 'ticket-comps' Morgan had in his promotion arsenal for use with the radio and press crowd.
Truth be told, he probably generated more airplay and press in the Bay Area for other--more needy Universal recording artists by leveraging Neil Diamond concert tix.
From the 1960s to the 1980s, Neil was one the more successful rock music performers, scoring an extraordinary number of charted hits. Morgan recalls how distressed his mentors at Uni Records were (Russ Regan, Pat Pipilo, and Rick Frio) when Neil decided to leave the label and sign with Columbia Records/Sony Music. At the time, there may have been a turf battle underway in the corporate suite--especially after the late Artie Mogul and his A&R staff headed by Don Shane signed Andy Kim (Sugar, Sugar) who had reinvented himself in the image of Neil Diamond with the mid-chart hit single, 'Rock Me Gently'. In the end, Columbia Records won simply by making an offer Neil couldn't refuse.
As critic William Ruhlmann once wrote: "Neil Diamond claims worldwide record sales of over 140 million copies, and he was ranked third, behind only Elton John and Barbara Streisand." Neil's songs have been recorded by a vast array of performers from all musical genres.
He posted the 'Cherry Cherry' video as a reminder that Neil has been continually passed over for induction into the Rock & Roll Hall of Fame since his eligibility in 1989. And that is a damn shame.

When I decided to review this Pitch Black IPA from Widmer, I checked my absurdly massive archives and much to my surprise I had not reviewed any beers from this brewery despite their close proximity to my abode. Probably because most of their beer sucks donkey balls. Amnesia Brewing is right down the street from Widmer and they are WAY better (Amnesia does not currently bottle their beer, or have a website, but soon enough I will do a review on the brewery itself). Occasionally, Widmer comes out with a good limited release brew which is why I picked up this six-pack. Basically this is a nice black ale in its own right. Too bad that in a bullshit marketing move Widmer decided to slap the IPA label on it. I am sure they did this because out here anything that says "IPA" sells like hot cakes while "Black Ales" are marginalized. I don't really blame them since this marketing ploy worked on me and I did enjoy the beer but I still think that it is pretty fucked up. If you do have a chance to visit the brewery on Russell Street be sure to do it in the summer. You can sit outside in the shadow of the Fremont Bridge and drink beer from a huge ass stein (I can't remember the exact size but it is at least 40oz) while smoking fine cigars and conversing with good company. Well, in your case, talking to yourself and updating your twitter about what stupid shit your cats did today. 3.95 out of 5. Drink it.

Hi. I'm James Knott and today we are drinking Young's Double Chocolate Stout from Young's and Wells Brewing Company in Bedford, England.
This stout is brewed with dark chocolate, chocolate malt and sugar. The brewery says it is "satisfyingly indulgent, but never overly sweet". Other ingredients include pale and crystal malt along with goldings and fuggles hops. It is 5.2% ABV and the cans have a nitrogen widget to add to the creamy head and mouthfeel.
The company says to serve it "cool, but not ice cold".

The final full week before Christmas is upon us and I'm trying not to completely lose my mind. While our pantry is filled to the brim with Chocolate & Peppermint Bark Cookies; Pine Nut, Caramel & Shortbread Bars; and Cinnamon & Almond Meringue Star Cookies, I have yet to finish my Christmas shopping and wrapping seems like a monumental task. I'm going to need some serious protein to power through my to-do list. That's where these crunchy little morsels come into play. Once the chickpeas (also known as garbanzo beans) are roasted, they are tossed with a mixture of brown sugar, fresh rosemary, cayenne pepper, and kosher salt that lends a sweet, spicy, and salty kick to these crunchy legumes. A handful of this tasty snack before elbowing my way into ToysRUs will definitely give me the edge over those other Star Wars lego-hunting, Zhu Zhu pet-seeking desperate parents. Preheat oven to 350 degrees F.
Drain 2 cans of chickpeas (garbanzo beans) into a strainer. Rinse and drain very well. Dry the chickpeas on a large sheet of paper towel, with another sheet laid over top. Pat gently to remove excess water.
Toss chickpeas with 2 tablespoons olive oil and 1/2 teaspoon kosher salt and arrange in a single layer on a baking sheet.
Roast for 40-50 minutes, or until chickpeas are golden brown and rattle when you shake the baking sheet.
While the chickpeas are roasting, combine 2 tablespoons (packed) brown sugar, 2 tablespoons chopped fresh rosemary, 1 teaspoon olive oil, 1/4 to 1/2 teaspoon cayenne pepper (depending on your heat tolerance), and 1/2 teaspoon kosher salt in a medium bowl.
Pour the roasted chickpeas into the bowl and toss with the brown sugar mixture. Cool completely. Serve. Store in an airtight container for up to one week.

Here's another recipe for a condiment that I'll be serving along with tonight's dinner, "Tequila Lime Chicken Fajitas." Some people think of pico de gallo as salsa; however, its simplest form, I'd say that it more closely resembles a side salad of marinated fresh raw chopped vegetables than an actual sauce/salsa per se.
It's commonly used as a topping for tacos, empanadas, tortilla chips, and of course, fajitas. :)
Pico de Gallo
Ingredients:
1 1/2 c. vine-ripened tomatoes, diced (about 1 1/2 large tomatoes)
2 Tbsp. freshly squeezed lime juice (the juice about about 1/2 lime)
1/4 c. red onion, peeled & diced (about 1/4 large onion)
1/2 Tbsp. jalapeño, stemmed & diced (or seeded & reduced to 1/4 tsp., if you prefer less heat)
1/2 Tbsp. fresh garlic, peeled & finely minced (about 1 small clove)
1/4 tsp. salt
1/8 tsp. ground black pepper
2 Tbsp. fresh cilantro, finely minced
1/2 tsp. pico de galloseasoning (substitute with Mexican chili powder if unavailable)
1/4 tsp. ground cumin
1 dash hot sauce, or to taste (optional)
Directions: Mix together ingredients, marinate in refrigerator for 1-2 hours, & then serve.
Yield: Makes a little more than 2 c. (Or, 2 c. + 1 T. + 1 1/8 tsp., to be exact. ;) )
Chef's Notes: Some of you may prefer to drain (or seed) the tomatoes before incorporating them into the pico de gallo mixture. Or, alternatively, you could use quartered grape or cherry tomatoes, which contain less juice than the full-sized, vine-ripened variety.

Well I have a bunch of leftover buffalo and blue cheese from the Buffalo Blue Balls I made earlier so I thought I would make a gigantic blue ball and call it a stuffed burger. If you missed out on prior posts, the buffalo is a mystical and esoteric animal that loves to be consumed by humans. They underwent massive slaughter in the name of fun and bizarre religious rituals but the buffalo does not hold it against us. They are cool like that. So without any further adieu, let's begin:
Take your meat and form two equal sized, flat patties. Fill one with as much blue cheese as you can fit. Then take the other, place on top, and seal the sides. Do not try to make a patty, cut a hole in it, and stuff it through the hole. I know that is what you were thinking, loser.
Since I am only cooking one burger I don't want to start the grill and waste a bunch of charcoal. While poisoning the environment would be fun, that charcoal is damn expensive. Get your cast iron skillet sizzling at about a 6 or a 7 and plop that baby down.
Everyone probably knows this already but this is a little trick I picked up while watching the cooks at the bar I worked at. Once you have flipped your burger, splash some water down and cover it so it gets steamed. This cooks the burger evenly and seals in the juices.
Serve with more blue cheese and, that's right folks, Trailer Park Pasta Salad. I would also suggest some spinach for your burger but I didn't have any. I still need to go grocery shopping. Eat it.

There are times in your life when you are touched so deeply by someone else's story that it consumes your thoughts. Such is the case with Stephanie Nielson, author of the blogs NieNie Dialogues and Cuisine Nie. Almost two years ago, Stephanie and her husband, Christian, were critically injured in a plane crash. Christian suffered burns on over 30 percent of his body while Stephanie, unfathomably, received burns on over 80 percent of her body. However, it is not just that part of their story that struck me the most. Rather, it is the tenacity and courage with which they face each day. Stephanie has undergone countless surgeries and, on her blog, has been very candid about the pain, both physical and emotional, that she, Christian, and their children have endured. And yet, each post shines with an abundance of hope and renewal as they devote themselves to living their new lives. We could all learn a lesson or two from this family.

Every Friday is pizza night at our house. While that might seem a little mundane to some, it helps to take the pressure off of menu planning at the end of the work week. It also gives us an opportunity to highlight any seasonal vegetables that we pick up from the local farm stand. I wasn't feeling particularly inspired to come up with a new combination for dinner last night, so we threw together some standards - pepperoni, pesto, and goat cheese (mozzarella for the kids). However, when I opened the pantry after dinner, a beam of sunlight streamed through the kitchen window and alighted on a jar of Nutella. It was practically wearing a halo and I could almost hear the angels singing. It was divine inspiration, I tell you.
So, what to do with this celestial jar of Nutella. That's a lot of pressure to put on one little jar of chocolate and hazelnut goodness. I started rooting through the fridge and an idea began to form. Nutella in the pantry, strawberries in the fridge, basil in the garden, and some extra pizza dough. Folks, we have a winner!
Alright, back to earth and to the realization that I am not the first person to ever smear Nutella on pizza dough. It's just the first time that I've done it.
Make one recipe of my homemade pizza dough and set to rest. This will a lot of dessert pizza, which works well if you are feeding a crowd. If not, just divide the dough into portions and use what you need. You can also use store-bought pizza dough.
Preheat the oven to 500 degrees F. Once the oven is preheated, put the pizza stone in the oven for 15 minutes. If you're using a baking sheet, you can skip this step.
Roll out the dough into six 6-inch rounds. I only made one of these little guys, so that's what you'll see in the photos.
Melt 2 tbsp of butter in a small bowl and lightly brush some butter on the dough.
Sprinkle the pizza stone with cornmeal and slide the pizza dough onto the stone. Bake until the dough is golden brown, 6 to 7 minutes. if you are using all four rounds, you may have to bake them in a couple of batches.
Spread 1/4 cup of Nutella on each pizza round. Spread 1/2 cup sliced strawberries on each pizza. Sprinkle each round with 1 tbsp sliced fresh basil.
Return the pizzas to the oven and bake for an additional minute. Remove the pizzas from the oven, let rest for 5 minutes, and cut each pizza into 4 wedges. Serve and swoon.

1 3/4 cups all purpose flour
1 1/4 cups finely ground almonds
1/2 cup finely ground toasted hazelnuts (filberts)
1/2 cup unsweetened cocoa powder
1 1/4 cups butter, softened (room temperature)
1 cup powdered sugar
1 tsp vanilla
1 cup chocolate chips melted
1. In a medium bowl, combine flour, almonds, hazelnuts and cocoa powder; set aside. In a large bowl, beat butter with an electric mixer on medium to high for 30 seconds. Add sugar and vanilla. Beat until combined, scraping bowl occasionally. Add the flour mixture, beating at low speed, just until combined. Cover and chill for 2 hours or until dough is easy to handle.
2. Preheat oven to 350F. Shape dough into 1" balls. Roll between hands into a small log shape with tapered ends and bend them inward to make a crescent shape.. Place the crescents one inch apart on an ungreased cookie sheet and bake 15-17 minutes until set.
3. Drizzle melted chocolate over cooled cookies, let stand until chocolate sets.
